Air Fryer, Roasted Leg of Lamb With Garlic and Rosemary

 

This is such a great and tender dish to make in the air fryer, remember to check your meat frequently with a meat thermometer so do not dry out your meat. Today, I used a simple rub of garlic and rosemary, but feel free to switch out the spices, or anything that you like. The lamb is fully cooked when it reaches, 130 degrees F.

Here are the simple instructions, so you can cook it in your very own air fryer,

 

This is the lamb that I used in this recipe, it was approximately 3 pounds.
In a small bowl, mix together the minced garlic, salt, rosemary, black pepper, and olive oil.

 

Rub the seasoning mix,  all over the lamb.
Set the lamb into the air fryer for 25 minutes at 350 degrees F (air fryer setting)

 

Check with a meat thermometer and make sure that the temperature is 130 degrees F before you remove.

 

Here are the chart, the size of the lamb and the air fryer will determine how long it will take to cook your leg of lamb, here is a chart:

Rare:120 to 125 degrees F – center is bright red, pinkish toward the exterior portion

Medium Rare:130 to 135 degrees F – center is very pink, slightly brown toward the exterior portion

Medium:140 to 145 degrees F – center is light pink, outer portion is brown

Medium Well:150 to 155 degrees F – not pink

Well Done:160 degrees F and above – meat is uniformly brown throughout

Ingredients

Scale
  • 3 pound leg of lamb
  • 3 tablespoons minced garlic
  • 1 tablespoon salt
  • 2 tablespoons minced fresh rosemary
  • 1/2 teaspoon  black pepper
  • 1/4 cup beef broth
  • 2 tablespoons olive oil

Instructions

  1. In a small bowl, mix together the minced garlic, salt, rosemary, black pepper, and beet broth, and olive oil.
  2. Rub the seasoning mix,  all over the lamb.
  3. Set the lamb into the air fryer for 25 minutes at 350 degrees F (air fryer setting)
  4. Check with a meat thermometer and make sure that the temperature is 130 degrees F before you remove it.
  5. Check with the chart below, before you remove it.

 


Notes

Here is the chart, the size of the lamb and the air fryer will determine how long it will take to cook your leg of lamb.

Rare:120 to 125 degrees F – center is bright red, and pinkish.

    I’m hoping you can help me. I am horrible at trying to convert times. I have a 1.57 pound boneless. We like it med rare. Should I cook it the same time as with the bone?

      I would always cook at the same temperature, but it will need less time. Remember to use your meat thermometer and check periodically, so it ends up at a lovely, 145 degrees F.

    Wow! This was my first roast in the air fryer and my family was spell bound…we couldn’t believe how good it tasted and I loved how easy it was to prepare. I used a different cut of lamb, and found I needed more cooking time, but that was an easy fix. I will certainly be making this again and think this recipe will also work well with pork too.
