These pita pocket sandwiches are a delicious and healthy option for lunch. They’re also surprisingly easy to make, and you can customize them with your favorite vegetables and sauces!

The Air Fryer is a fantastic tool, as it cooks food quickly without the need for oil or butter. This means that these pita pockets will be low calorie, low fat, and high in protein. You can even use leftovers from last night as long as they’re cooked through!

I recommend using diced chicken breast because it’s already cooked, which saves time. I like to use either lettuce or tomatoes for a classic twist on BLT or a broccoli slaw because it gives this dish some crunch and provides you with more veggies than just lettuce would have provided.

Start by shredding the lettuce, into long strips. Dice your leftover chicken breasts, into bite-size pieces.

Add the shredded lettuce, diced chicken, and diced tomatoes, into a large mixing bowl. Large enough so you can mix the ingredients.

I used scissors and cut up the leftover bacon, add the ranch dressing to the ingredients and mix well.

Ingredients 

  • 2 cups lettuce, shredded
  • 2 cups chicken, diced
  • 1 large tomato, sliced
  • 4 slices bacon, cooked
  • 1/4 cup ranch dressing
  • 2 pieces pita bread, sliced in half

Instructions

  • Start by shredding the lettuce into long strips.
  • Dice your leftover chicken breasts (I have instructions on my website for making a really juicy breast, as you can tell by the picture)
  • Dice the chicken into bite-size pieces.
  • Add the shredded lettuce, diced chicken, and diced tomatoes into a large mixing bowl. Large enough so you can mix the ingredients.
  • I used scissors and cut up the leftover bacon.
  • Add the ranch dressing to the ingredients and mix well.
  • Plate, serve and enjoy!
