With only 5 ingredients needed, it’s easy to whip up this creamy and crunchy fruit-filled meringue dessert!

- Egg Whites: Use large room-temperature egg whites to make them easier to beat. It’s essential to beat them properly to get your pavlova to rise.
- Sugar: Superfine sugar or caster sugar would be ideal here — you don’t want to use granulated sugar as it would make the batter too grainy.
- Corn Flour: Helps stabilize the egg whites and provides structure. It even helps add that crispy finish you’re after. You can also use cornstarch instead.
- White Vinegar: Adds some acid, which also works to stabilize those egg whites. Apple cider vinegar or lemon juice are good substitutions.

How To Make Air Fryer Raspberry Pavlova
If you love the crunchy sweetness of crispy meringue, then this raspberry pavlova is a must-try! Making it in the oven can take several hours, but with my recipe, you can make air fryer meringue quickly and serve this delicious dessert faster than ever.
Step 1: Prepare the meringue
Add the egg whites to a large bowl and whisk until firm peaks form. You can use an electric beater, hand mixer, or stand mixer.
Slowly add the castor sugar, and stir until the mixture is thick and glossy. Add the cornflour, vinegar, and vanilla and beat until well combined.
Step 2: Add to the air fryer
Spray your air fryer basket with cooking spray, add a sheet of parchment, then spray the parchment paper as well. If you’re using an air fryer pan, place the paper directly inside and then add the nonstick spray.
Step 3: Air fry
Set your air fryer to 250 degrees F and cook the meringue for about 15-20 minutes, or until it’s set. Let it cool in the basket before removing to keep it from breaking.
Step 4: Assemble
Once completely cool, remove the meringue from the basket and place it on a serving dish or cake stand as shown in the images. Top with fresh whipped cream, raspberries, and chocolate shavings, and enjoy!

- 4 large egg whites
- 1 cup caster sugar
- 1 teaspoon corn flour, or cornstarch
- 1 teaspoon white vinegar
- 1 teaspoon pure vanilla extract
- 2 cups whipped cream
- 1 cup raspberries
Instructions
- Use an electric beater, hand mixer, or stand mixer. Add the egg whites into a large bowl, and whisk the egg whites until firm peaks form.
- Slowly add the castor sugar, and continue to stir constantly until the mixture is thick and glossy. Add the cornflour, vinegar, and vanilla and beat until well combined.
- Spray your air fyrer basket with cooking spray, then add a sheet of parchment paper to the air fyrer basket. Spray the parchment paper again, with cooking spray. If you are using an air fryer pan, place the parchment paper into the pan.
- Add the pavlova mixture onto the parchment paper, using the back of a spoon, or a wooden spoon, and pat the mixture down
- Set the air fryer to 250 degrees F, and set the cooking time for 15-20 minutes, or until the pavlova is set. Allow the pavlova to cool in the air fyrer basket before you try to remove it.
- Serve with fresh whipped cream, raspberries, and chocolate shavings.
