Step 2: Spread the Nutella. Warm it briefly if it’s stiff, then spread it in a thin, even layer across the whole sheet — but leave a clean ¾-inch border along the far long edge. That bare strip is what seals the log shut. Thin and even beats thick and patchy; too much filling is the main cause of leaking.

Step 3: Roll it up. Starting from the long edge nearest you, roll the pastry into a tight log. Firm pressure, but don’t crush it. When you reach the bare border, press it against the log to seal.

Step 7: Air fry 8–10 minutes. Line the basket with perforated parchment or spray it lightly. Place the scrolls cut-side down with at least an inch between them — they expand significantly. Troubleshooting

The Nutella leaked everywhere. Too much filling, or no bare border at the seam. Use a thinner layer and leave that ¾-inch strip.

The bottoms are soggy. The scrolls were touching, or the basket wasn’t preheated. Also check that you’re not using a solid parchment liner — it blocks airflow underneath. Perforated liners only.

They unrolled during cooking. The log wasn’t rolled tightly, or the seam wasn’t sealed. Placing each scroll cut-side down with the loose tail tucked underneath helps hold it.

They didn’t puff. The pastry was too warm when it went in, or the air fryer wasn’t preheated. Cold pastry, hot air fryer.

They’re browned outside but doughy inside. Slices were too thick. Stay at or under 1¼ inches.
