I first made this as an after-school snack for my son, and it’s been on regular rotation since. If you love quick single-serve desserts, it’s in good company with my Air Fryer Lemon Mug Cake and this 2-ingredient chocolate chip cookie mug cake.

Why You’ll Love This M&M Mug Cake

It’s genuinely fast — five minutes to mix, ten to twelve to cook. It uses ingredients you almost certainly already have. It’s perfectly portioned for one, so there’s no half-eaten cake sitting on the counter. And because the air fryer heats evenly, you get a set, cooked-through center without a burnt edge — the most common problem with microwave mug cakes.

Ingredients

You only need a few things:

Ingredients for air fryer M&M mug cake: flour, sugar, butter, egg yolk, vanilla, and M&M candies
  • Brown sugar – adds moisture and a light caramel note.
  • White sugar – balances the sweetness and helps the top set.
  • Melted butter – richness and a tender crumb.
  • Egg yolk – binds everything and keeps the center soft (yolk only, so it doesn’t turn rubbery in such a small portion).
  • All-purpose flour – just enough for structure.
  • Vanilla extract – rounds out the flavor.
  • A pinch of salt – sharpens the sweetness (see the note below on quantity).
  • M&M’s – fold in whatever variety you like; plain, peanut, and caramel all work.

How to Make an Air Fryer M&M Mug Cake

Brown sugar, butter, egg yolk, flour, and vanilla stirred into M&M mug cake batter in a small bowl

Step 1: In a small bowl, stir together the brown sugar, white sugar, melted butter, egg yolk, flour, vanilla, and salt until just combined. Don’t overmix — a few streaks are fine.

Step 2: Fold in the M&M’s, reserving a few to press on top.

Step 3: Grease a 12 oz oven-safe ramekin or mug with nonstick spray and add the batter, filling it about two-thirds full so it has room to rise.

Step 4: Air fry at 310°F for 10–12 minutes. It’s done when the top is set and a toothpick in the center comes out with just a few moist crumbs.

Step 5: Let it cool for a couple of minutes — it firms up as it sits — then eat it straight from the ramekin.

recipe tips

  • Pick the right ramekin. Use a 12 oz oven-safe ramekin or mug that fits your basket with room for air to circulate around it.
  • Fold gently. Stir the M&M’s in carefully so they don’t crack, and hold a few back to press on top so they stay whole and glossy.
  • Don’t overmix. Stir the batter until just combined — a few streaks of flour are fine. Overmixing makes the cake dense.
  • Check doneness at 10 minutes. A toothpick in the center should come out with just a few moist crumbs. If it’s still wet, add a minute at a time — mug cakes overcook fast.
  • Let it rest. Give it a couple of minutes before digging in. That short rest is what sets the center instead of leaving it molten.
  • Adjust for your air fryer. Wattages vary, so use the visual cues (set top, clean-ish toothpick) rather than the clock alone.

Easy Variations

Turn it into a double-chocolate version by stirring a teaspoon of cocoa powder into the batter. Swirl in a little peanut butter and use peanut M&M’s for a nuttier take. Or drizzle caramel over the top before serving. Once you’ve got the base down, it’s an easy template — the same method works for my Air Fryer Strawberry & Cream Mug Cake, Peach Cobbler Mug Cake, and Twix Mug Cake.

Frequently Asked Questions

Can I make it without an air fryer? Yes. Bake it in a preheated 350°F oven for about 15–20 minutes, until a toothpick comes out clean.

Can I use different mix-ins? Absolutely — chocolate chips, chopped nuts, or dried fruit all work in place of, or alongside, the M&M’s.

Can I double the recipe? Yes. Split the batter between two ramekins and keep the same temperature; you may need an extra minute or two.

How do I store leftovers? Cover and keep at room temperature for up to 2 days, or refrigerate for 3–4 days. It’s best warmed briefly before serving.

Can I make it gluten-free? Swap in a 1:1 gluten-free flour blend and check that your other ingredients are gluten-free.
