Everyone’s favorite side dish, now made in the air fryer. Today, I am going to show you how to make Air Fryer Mini Sweet Potato Casseroles.

Ingredients 

Sweet Potatoes:

  • 4 pounds sweet potatoes, peeled and cut into 1” pieces
  • 4 tablespoons unsalted butter, 1/2 stick
  • 3/4 cup packed light brown sugar
  • 1/2 cup heavy cream
  • 1 teaspoon kosher salt
  • 1 tablespoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Topping:

  • 2 cups mini marshmallows
  • 1/2 cup all-purpose flour
  • 4 tablespoons unsalted butter
  • 6 tablespoons packed light brown sugar
  • 1/4 cup old fashioned rolled oats, not instant oats
  • 1/4 teaspoon ground cinnamon

Instructions

  • Spray your casserole dish or baking dish with cooking spray.
  • Cut your sweet potatoes into 1 to 2 inch pieces
  • Fill a saucepan with water, and then boil the sweet potatoes until they are fork tender, about 10 to 15 minutes.
  • Drain the water, and then using a potato masher, mash the potatoes until they are smooth.
  • Fold in the rest of the ingredients for the sweet potatoes, mix well.
  • Transfer the sweet potatoes to the greased casserole dish.
  • In.a large bowl, add all of the ingredients for the topping, and then sprinkle over the casserole.
  • Set into the air fryer and cook at 300 degrees F, air fryer setting, for 10 to 15 minutes. If you find that he top is getting too brown, cover the casserole tightly with foil.
