Pro Tips

  • Start with room temperature ingredients, allowing the cheesecake filling to be properly mixed.
  • If you find that your phyllo shells fly around the basket, use pie weights to hold them down. You will find pie weights very helpful in your air fryer baking.
  • You can substitute Neufchatel cream cheese for a Weight Watcher version of this recipe.
  • This recipe has been made in several air fryers, including the Ninja Foodi, Instant Pot Vortex, and other basket and oven models. The recipe will remain the same.

Faq’s

Can I use any type of phyllo shells for this recipe? Yes, most store-bought phyllo shells will work for this recipe. Just ensure they fit comfortably in your air fryer without overcrowding.

Do I need to preheat my air fryer for this recipe? It’s generally a good idea to preheat your air fryer to ensure even cooking. Preheat to 350°F (175°C) if your air fryer model requires it.

How do I know when the cheesecake bites are done? The cheesecake bites are done when the filling is set, and the phyllo shells are lightly golden. This usually takes about 3-5 minutes, but times can vary depending on the air fryer model.

Can I make the cheesecake filling in advance? Absolutely! You can prepare the cheesecake filling ahead of time and store it in the refrigerator. Just bring it to room temperature before filling the phyllo shells to ensure it pipes smoothly.

Is it necessary to use fresh lime juice? While fresh lime juice is preferred for its flavor, you can use bottled lime juice in a pinch. Fresh lime zest, however, is highly recommended for the best flavor.

How long can I store these cheesecake bites? Once cooked and cooled, you can store these bites in the refrigerator for up to 2 days. The phyllo may soften a bit, but they’ll still be delicious.

Can I freeze Air Fryer Lime Cheesecake Bites? Freezing is not recommended as the phyllo shells can become soggy upon thawing, and the filling may lose its texture.

How can I prevent the phyllo shells from burning? Keep a close eye on them as they cook, as phyllo dough can brown quickly. If they seem to be browning too fast, lower the temperature of your air fryer.

Can I add other flavors to the cheesecake mixture? Yes, feel free to experiment with other citrus flavors like lemon or orange, or add extracts like almond or coconut for a different twist.

What’s the best way to garnish these bites? A dollop of whipped cream and a sprinkle of lime zest or a small lime slice are classic choices. You could also try dusting with powdered sugar or drizzling with a lime glaze.
