- All-Purpose Flour
- Powdered Sugar
- Cornstarch
- Salt
- Butter
- Eggs
- Granulated Sugar

How To Make Air Fryer Lemon Bars

Start by making the crust. In a large bowl, mix the flour, powdered sugar, cornstarch, and salt. Then add the butter mix well until the mixture is coarse crumbs.
Spread the mixture into a sprayed pan and press firmly into an even layer over the pan’s bottom and slightly up on the sides. Place into the refrigerator for about 20-30 minutes until firmed up. Then place into the air fryer for 15-20 minutes at 320 degrees F, air fryer setting, until golden brown.
How To Make The Lemon Filling:

While the shortbread is cooking, make the lemon filling in a large bowl, mix the eggs, sugar, flour, mix in the lemon zest, lemon juice, milk, and salt.
Place the filling into the crust, bake until the filling is firm to the touch. About 10-12 minutes at 300 degrees F, air fryer setting.

CAN LEMON BARS BE MADE AHEAD?
If you are were looking for a great and easy treat to make ahead of time, Lemon Bars do well at storing. They will last about 2 to 3 day days ahead of time.
For best results, let them cool to room temperature, place them into an airtight container, and put them in the refrigerator.
Then dust with some powdered sugar right before serving.
CAN LEMON BARS BE FROZEN?
Yes, you can freeze them. I usually freeze the shortbread crust and then add the lemon filling right before serving. I find that they do better, as the shortbread crust remains crispy.
But if you made a whole batch or doubled the recipe and wanted to freeze the lemon bars for a quick and easy treat or dessert, here is the best way to freeze the bars:
Let them cool to room temperature.
Cut the lemon bars into individual pieces, place the lemon squares/bars onto a baking sheet, and put them into the freezer until frozen solid.
Remove the frozen solid lemon bars, and use saran wrap to wrap them individually. They will last between 1 to 2 months.
To use frozen, place them into the refrigerator the night before eating them or serving them.

Love the recipe but what size pan to use?

Lemon squares are one of my most favorite sweet treats! This looks great. One question, for future reference: could these be made with TrueLemon? These are dry, crystallized packets of lemon flavor (citric acid, lemon oil, lemon juice). One packet = 1 lemon wedge, according to the package, which does say it can be used in recipes. The nice thing about the TrueLemon is that it doesn’t spoil as real lemons do, if your baking plans get delayed for a while.

Any pan that is oven safe, that is a bit smaller than your air fryer basket will work.
