Step Two: Spread the mixture into a sprayed pan and press firmly into an even layer over the pan’s bottom and slightly up on the sides. Place into the refrigerator for about 20-30 minutes until firmed up. Then place into the air fryer for 15-20 minutes at 320 degrees F, air fryer setting, until golden brown.

Step Three: While the shortbread is cooking, fill the lemon in a large bowl. Mix the eggs, sugar, flour, lemon zest, lemon juice, milk, and salt.
Step Four: Place the filling into the crust and bake until the filling is firm to the touch. Set cook time for 10-12 minutes at air fryer temperature of 300 degrees F, using air fryer setting.

Lemon Filling:
- 4 large eggs
- 1 1/3 cup granulated sugar
- 3 tablespoons all-purpose flour
- 2 teaspoons lemon zest
- 2/3 cup lemon juice
- 1/3 cup whole milk
- 1 teaspoon kosher salt

Any pan that is oven safe, that is a bit smaller than your air fryer basket will work.

Lemon squares are one of my most favorite sweet treats! This looks great. One question, for future reference: could these be made with TrueLemon? These are dry, crystallized packets of lemon flavor (citric acid, lemon oil, lemon juice). One packet = 1 lemon wedge, according to the package, which does say it can be used in recipes. The nice thing about the TrueLemon is that it doesn’t spoil as real lemons do, if your baking plans get delayed for a while.
