- 4 large eggs, separated & room temperature
- 1/4 teaspoon cream of tartar
- 2/3 cup granulated sugar, divided
- 1/4 teaspoon salt
- 3/4 teaspoon pure vanilla extract
- 1 cup all-purpose flour
- 1 tablespoon cornstarch
- 1/4 cup powdered sugar, optional
Instructions
- Prepare the air fryer tray with a fitted parchment paper sheet.
- In a large bowl, mix together the egg yolks ⅓ cup sugar, and 1/4 teaspoon salt until creamy. Stir in the 1 cup all-purpose flour 3/4 teaspoon pure vanilla extract and 1 tablespoon cornstarch. Set aside.
- Add egg whites and 1/4 teaspoon cream of tartar to a separate large bowl and mix with an electric or stand mixer until peaks form.
- Add in ⅓ cup of sugar and mix until incorporated and stiff peaks form.
- Fold in half of the whipped egg whites into the egg flour mixture until just incorporated.
- Add in the remaining egg white mixture until combined, avoid overmixing.
- Spoon mixture into a piping bag with a 1 inch tip.
- Working in batches, pipe 1 inch thick and 3-4 inch long strips onto the parchment paper in the air fryer, leaving 2 inches of space between each ladyfinger.
