  • 4 large eggs, separated & room temperature
  • 1/4 teaspoon cream of tartar
  • 2/3 cup granulated sugar, divided
  • 1/4 teaspoon salt
  • 3/4 teaspoon pure vanilla extract
  • 1 cup all-purpose flour
  • 1 tablespoon cornstarch
  • 1/4 cup powdered sugar, optional

Instructions

  • Prepare the air fryer tray with a fitted parchment paper sheet.
  • In a large bowl, mix together the egg yolks ⅓ cup sugar, and 1/4 teaspoon salt until creamy. Stir in the 1 cup all-purpose flour 3/4 teaspoon pure vanilla extract and 1 tablespoon cornstarch. Set aside.
  • Add egg whites and 1/4 teaspoon cream of tartar to a separate large bowl and mix with an electric or stand mixer until peaks form.
  • Add in ⅓ cup of sugar and mix until incorporated and stiff peaks form.
  • Fold in half of the whipped egg whites into the egg flour mixture until just incorporated.
  • Add in the remaining egg white mixture until combined, avoid overmixing.
  • Spoon mixture into a piping bag with a 1 inch tip.
  • Working in batches, pipe 1 inch thick and 3-4 inch long strips onto the parchment paper in the air fryer, leaving 2 inches of space between each ladyfinger.
  • Select the air fryer at 340 degrees and cook for 5-7 minutes, or until the ladyfingers are cooked through and lightly golden.
  • Sprinkle with confectioners sugar and serve, or use in tiramisu.
