Instant Pot Mexican Queso is amazingly awesome. It makes a perfect dip for any occasion. I love sharing, and this is the perfect dip.

Ingredients 

  • 1 pound ground beef, lean
  • 2 tablespoons butter, unsalted
  • 2 tablespoons cornstarch
  • 1/2 cup white onion, diced
  • 1 large jalapeno, diced
  • 2 tablespoons garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 12 ounces evaporated milk
  • 1 can Rotel
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 3 cups shredded cheese, Mexican Cheese Blend

Instructions
