Large flour tortilla: One 8- to 10-inch burrito-size tortilla becomes the crust. Corn tortillas will work but tend to split — overlap two and accept a more rustic edge. For low-carb, an almond flour or low-carb tortilla holds up fine. If yours is stiff, microwave it for 10 seconds first.
Olive oil: Just a teaspoon, or a few sprays of cooking oil, to grease the basket. This is what keeps the tortilla from sticking and helps the bottom crisp instead of steam. Avocado oil or butter both work.
Large eggs: Four eggs are the base of the frittata. Use large, not extra-large — too much volume and the center won’t set before the top browns. Let them sit out for a few minutes if you have time, since room-temperature eggs cook more evenly.
Whole milk or heavy cream: Three tablespoons is all you need, and it makes the difference between tender eggs and rubbery ones. Cream gives the richest result, whole milk is the everyday choice, and unsweetened oat milk works if you’re dairy-free.

How to Make an Air Fryer Egg Tortilla Frittata

Step One: Press the tortilla into the basket. Grease the air fryer basket lightly with olive oil. Press the tortilla straight in so it covers the bottom and comes up the sides, letting it ruffle and fold where it wants to. Don’t trim it — those folded, exposed edges get the crispiest.
Step Two: Brown the shell. Set the temperature to 350 degrees F, air fryer setting, for 3 minutes, until the tortilla is set, lightly golden, and holding its bowl shape on its own. Don’t skip this. This is the step that turns a floppy tortilla into a crust that can hold liquid egg without going soggy underneath.

Step Three: Whisk the eggs. While the shell crisps, whisk the eggs, milk, salt, and pepper for about 30 seconds, until uniform and slightly frothy. Stir in the cheese, bell pepper, onion, and any meat you’re using.
Step Four: Fill and cook. Pour the egg mixture into the crisped tortilla shell, keeping it below the tortilla’s sides. Set the temperature to 320 degrees F, air fryer setting, for 10 to 12 minutes. Low and slow is the key — a hotter setting browns the top before the center sets.

Recipe Tips for the Best Results
Never skip browning the shell first. Three minutes of dry heat before the eggs go in is what makes the no-pan method work at all — it’s the difference between a crisp crust and egg leaking through the basket.
Don’t overfill. Keep the egg below the tortilla’s sides. Eggs puff as they cook, and there’s no pan wall to catch the overflow.

Do I really not need a pan for this? No pan needed. Browning the tortilla for 3 minutes first sets it into a firm shell that holds the eggs on its own. If your basket is very perforated, slip a parchment liner underneath for peace of mind.
What temperature is best for eggs in an air fryer? 320 degrees F is the sweet spot. Above 350 degrees F, the outside cooks too aggressively and the center stays wet.
