  • Potato: You do not need to peel the potatoes, but if you want to you can!
  • Eggs: Use large, room temperature eggs
  • Seasonings/Spices: Fresh Parsley, Salt, and Black Pepper

Preheat the air fryer to 400˚F (200˚C). Spray two small non-stick round tins with cooking spray. Divide the onion slices between tins, then place the potato slices on top, seasoning with a pinch of salt, and drizzle with olive oil—Cook for 10 minutes.

Once cooked, divide the egg mixture between the two cups, seasoning with salt and pepper.

  • Lower The Heat: As you notice from the recipe, I reduced the heat, after I cooked the potatoes, so remember to lower the heat.
  • Separate: Cook the potatoes and onions separately, from the egg mixture. You will end up with a crispy potato layer!
  • Room Temperature Eggs: Use large, room temperature eggs. Let the eggs come to room temperature, for at least 30 minutes, before making this recipe.
  • Small Ramekins or Pan: Use a small muffin tin, pan, or ramekins to cook the Spanish Tortilla in the air fryer!
