Air Fryer Egg Tortilla Frittata

Description

A flour tortilla crisps right in the air fryer basket and becomes its own crust — no pan needed. Fill it with eggs, cheese, and vegetables for a protein-packed breakfast in about 20 minutes.

Ingredients 

  • 1 large flour tortilla, 8–10 inches
  • 1 teaspoon olive oil
  • 4 large eggs
  • 3 tablespoons whole milk or heavy cream
  • ½ cup shredded cheddar or Monterey Jack cheese
  • ¼ cup diced bell pepper
  • 2 tablespoons finely diced red onion
  • ¼ teaspoon kosher salt
  • teaspoon black pepper
  • ¼ cup cooked crumbled bacon, diced ham, or chorizo (optional)

Instructions

  • Grease the air fryer basket lightly with olive oil. Press the tortilla straight in so it covers the bottom and comes up the sides, letting it ruffle and fold. Do not trim it.
  • Set the temperature to 350 degrees F, air fryer setting, for 3 minutes, until the tortilla is set, lightly golden, and holding its shape.
  • While the shell crisps, whisk the eggs, milk, salt, and pepper until frothy. Stir in the cheese, bell pepper, onion, and any meat.
  • Pour the egg mixture into the crisped tortilla shell, keeping it below the tortilla's sides. Set the temperature to 320 degrees F, air fryer setting, for 10 to 12 minutes.
  • The frittata is done when the center is set and a toothpick inserted near the middle comes out clean. Add 2 minutes at a time if needed.
  • Let it rest 3 minutes. Run a thin spatula underneath, lift it out in one piece, and cut into wedges.

Warm a stiff tortilla for 10 seconds in the microwave so it presses in without cracking. Sauté high-moisture vegetables like mushrooms, zucchini, or spinach before adding them. If your basket is heavily perforated, use a parchment air fryer liner underneath. Store leftovers in the refrigerator up to 4 days; reheat at 300 degrees F for 3 to 4 minutes to re-crisp the crust.
