S’mores brownies are a baked twist on the classic campfire treat: a rich chocolate brownie standing in for the chocolate bar, with graham crackers and toasted marshmallows worked right into the dessert. In this version, the graham crackers form a hidden crunchy layer through the middle of the brownie, and the marshmallows go on top where the air fryer can toast them to a deep golden brown. You get all three s’mores flavors in every square, with none of the mess of an actual campfire.

- Eggs, vegetable oil, and water: Whatever your specific brownie mix calls for on the box. Check the box before you start so you’re not caught short.
- Graham crackers: Broken into pieces to form the crunchy middle layer.
- Mini marshmallows: They toast quickly and cover the top evenly. Regular marshmallows work if you cut them down (see Pro Tips).
- Candy or chocolate chips: For extra chocolate. Chopped chocolate bars or chips both work.
How To Make Air Fryer S’mores Brownies

Step 1: Prepare your brownie batter according to the directions on the box (you’ll typically need eggs, oil, and water).

Step 2: Grease a baking pan that fits inside your air fryer basket (an 8-inch square pan works in most larger baskets — measure yours first). Pour in half the batter, then arrange broken graham crackers in a single layer across the top.

Step 3: Pour the remaining batter over the graham crackers so they’re sealed in the middle.
Step 4: Place the pan in the air fryer at 350°F for 20 minutes. Check with a toothpick — if it doesn’t come out clean, add up to 5 more minutes. Air fryers vary, so start checking at 20. Remove the pan and let the brownies cool for at least 15–20 minutes. This sets the crumb so the marshmallows don’t sink in.
Step 5: Scatter the mini marshmallows (and optional chocolate chips or candy) evenly over the top. Return to the air fryer at 400°F for 1 minute. Check — if they’re not golden yet, continue in 1-minute intervals, watching closely. Marshmallows go from golden to burnt fast. Let everything rest a few more minutes so the marshmallows and chocolate set slightly, then slice and serve.

Pro Tips
- Use parchment. Line your baking pan with a parchment sling (leave overhang on two sides) so you can lift the whole slab out for clean slicing. It also makes cleanup easy.
- Measure your pan against your basket. The most common reason this recipe goes wrong is a pan that doesn’t fit. Check that there’s airflow around all sides before you pour in batter.
- Don’t skip the cool-down. Marshmallows added to a hot brownie will melt and sink instead of sitting on top to toast. Patience here is what gives you that bakery-case look.
- Watch the marshmallows like a hawk. At 400°F they can scorch in under a minute. Stay at the air fryer and check every 60 seconds.
- Using regular marshmallows? Cut them in half and place them cut-side down so they toast evenly and cover more surface.
- For the cleanest slices, chill the fully cooled brownies in the fridge for 30 minutes, then cut with a knife wiped clean between cuts.
Storage and Reheating
- Reheating: Warm a square in the air fryer at 320°F for 1–2 minutes to bring back the gooey texture. I don’t recommend freezing — the toasted marshmallow top doesn’t thaw well.
- Room temperature: Store in an airtight container for 2–3 days.
- Refrigerator: Keeps up to 5 days; the marshmallows and chocolate firm up slightly when cold.

FAQs
Can I use homemade brownie batter instead of a box mix? Yes. Use your favorite from-scratch brownie batter and follow the same layering and timing. Keep an eye on doneness with a toothpick, since homemade batters can bake at slightly different rates.
Can I use large marshmallows instead of mini? Yes — cut them in half and place them cut-side down for even coverage and toasting.
Can I make these gluten-free? Yes. Use a gluten-free brownie mix (or gluten-free homemade batter) and gluten-free graham crackers. Double-check that any added candy is gluten-free too.
Why are my marshmallows burning before they’re golden? Your air fryer likely runs hot or the marshmallows are too close to the heating element. Drop to 350°F and toast in 1-minute checks instead of 400°F.
Can I toast the marshmallows in the same step as baking? No — add them only after the brownies have cooled. Baked from the start, they’ll melt and disappear into the batter instead of sitting on top.
