Skip the box! This Copycat BBQ Glazed Shake & Bake is made with simple pantry spices in 5 minutes. Perfect for pork chops, chicken & air fryer cooking.

If you love the BBQ Glazed Shake & Bake from the store, you are going to absolutely love this homemade version. It tastes just like the real thing — maybe even better — and you can make it in about 5 minutes with spices you already have in your pantry. No preservatives, no mystery ingredients, and a fraction of the cost of the box.
I have been making my own homemade shake and bake for years, and when I shared my original Homemade Shake and Bake recipe, everyone went wild for it. The BBQ glazed version is one of the most requested recipes I get, so here it is! My kids will not touch meat unless it is covered in some kind of seasoning or sauce, and this one gets them every single time. Whether you use it on pork chops, chicken, or even potatoes, it is a winner.

Why Make This at Home?
- Budget-friendly: A single box of Shake & Bake BBQ can cost almost as much as the meat itself. This homemade mix costs pennies per batch.
- No preservatives: You control every ingredient. No artificial additives or mystery fillers.
- More flavor: Because you are blending fresh spices, the flavor is bolder and more aromatic than the box.
- Incredibly easy: Toss everything into a blender or spice grinder, blend, and store. That is it.
- Versatile: Works beautifully on chicken, pork chops, potatoes, and vegetables.
- Gluten-free friendly: The mix itself contains no gluten-based ingredients.
BBQ Glazed Shake & Bake Ingredients

- Chili powder: bold heat, smoky chili flavor
- Brown sugar: sweet caramel notes, rich depth
- Garlic powder: savory garlic punch, strong aroma
- Onion powder: mellow onion flavor, savory base
- Lemon rind: bright citrus zest, fresh tang
- Paprika: mild smoky sweetness, warm red color
- Ground cinnamon: subtle warmth, hint of sweetness
- Salt: enhances all flavors, balances seasoning blend
How to Make It

Step 1 — Blend the spices. Add all of the ingredients to a small blender or spice grinder. Blend until the mixture is smooth and well combined. This only takes about 30 seconds.
Step 2 — Store it. Transfer the mix to an airtight container or a small mason jar. It will keep at room temperature in your pantry for up to 3 months, or in the freezer for up to 6 months.
Step 3 — Use it. When you are ready to cook, coat your meat evenly with the seasoning mix. You can shake it in a zip-top bag like the original, or simply press the seasoning onto the surface of the meat with your hands. Cook as you normally would — in the oven, air fryer, or on the grill.

Air Fryer Instructions
This mix is absolutely perfect for the air fryer. Here is how I use it on pork chops:
- Coat pork chops on both sides with the BBQ seasoning mix, pressing it in so it sticks.
- Preheat your air fryer to 400°F for 3 minutes.
- Place pork chops in a single layer in the air fryer basket.
- Cook at 400°F for 12–15 minutes, flipping halfway through, until the internal temperature reaches 145°F.
For chicken breasts, cook at 375°F for 18–22 minutes depending on thickness.
Oven Instructions
- Preheat oven to 400°F.
- Coat meat with the seasoning mix.
- Place on a parchment-lined baking sheet.
- Bake for 25–30 minutes, or until cooked through (internal temp 145°F for pork, 165°F for chicken).

Tips for the Best Results
- Press, don’t just sprinkle — For the coating to really stick, press the seasoning into the surface of the meat rather than just shaking it on.
- Pat the meat dry first — Blot pork chops or chicken dry with a paper towel before applying the mix. This helps the spices adhere and prevents steaming.
- Double the batch — This mix stores so well that it makes sense to make a double or triple batch and have it ready whenever you need it.
- Adjust the heat — Want more kick? Add ¼ tsp of cayenne pepper. Prefer it milder? Reduce the chili powder by half.
- Add a little oil — If you want a crispier exterior, lightly brush the meat with a small amount of olive oil before applying the seasoning.
Recipe Variations
Spicy BBQ: Add ¼–½ tsp cayenne pepper or a pinch of crushed red pepper flakes for extra heat.
Smoky BBQ: Swap the regular paprika for smoked paprika to deepen the BBQ flavor.
Low-sodium: Reduce or eliminate the salt. The chili powder and other spices carry plenty of flavor on their own.
Sweet & tangy: Add an extra teaspoon of brown sugar and a pinch of dry mustard for a more tangy glaze profile.
Keto-friendly: Replace the brown sugar with a brown sugar substitute like Swerve or Lakanto.

Storage & Make-Ahead
This is a dry spice mix, so it stores really well.
- Pantry: Store in an airtight container or mason jar for up to 3 months.
- Freezer: For even longer shelf life, store in the freezer for up to 6 months. No need to thaw — scoop directly from frozen.
- How much does it make? One batch makes about ¾ cup of mix, which is equivalent to roughly 3–4 packets of the store-bought version.
Frequently Asked Questions
Can I use this on chicken and pork? Yes! This mix works great on both chicken and pork. It is also delicious on potatoes — just toss diced or sliced potatoes in the seasoning and roast at 400°F until crispy.
How long does homemade shake and bake last? Stored in an airtight container, this mix lasts up to 3 months at room temperature, or 6 months in the freezer.
Is this gluten-free? Yes, the seasoning mix itself is gluten-free. Just make sure all of your individual spice ingredients are certified gluten-free if you have a serious allergy or celiac disease.
Does it taste like the real Shake & Bake BBQ? It is a very close match! The chili powder, brown sugar, and cinnamon combination nails that sweet-smoky-savory flavor of the original. Many readers say they actually prefer this homemade version.
Do I need a blender? A blender or spice grinder gives the smoothest, most evenly mixed result — but you can also just whisk all of the ingredients together in a small bowl if you do not have one.
Can I make a larger batch? Absolutely. Simply double or triple the recipe. Everything scales perfectly.

Bonjour je vais essayer les shake and vais BBQ glazed….

Very tasty. You will never EXACTLY emulate the old Shake N Bake, because they have chemicals and “spices” they do not divulge. This recipe is as close as I think you are going to get. Chili powder forward perhaps but not too bad. I did not have grated lemon zest, so I used a couple of packs of True Lemon powder. I have this printed out so I can use it again. Thank you for the recipe.

Remove the cumin, and it is very close to what I knew and loved as a kid in the 70s for BBQ SHAKE ‘N BAKE.

I’m hoping this recipe creates a reasonable replica of Shake ‘n Bake – BBQ Chicken Glaze. It’s the only Shake and Bake I like (well love). It’s availability in stores seems to wane at times, so whenever I see some, I buy. At this moment I have 7 boxes, plus one “in service”.
I’m apprehensive in that so many copycat recipes fall short of the real thing.
I’ll report back. If this recipe is a good replacement it will be FANTASTIC !

I am so happy to find this recipe. I always use the bbq shake and bake but now it cost as much as the meat and I told the family I’m sure there is a better way and bam! Your on it! So delicious. Do you mind if I copy your recipe with a link back to your blog on my Facebook post. I have many many friends I think would appreciate it.. my Facebook is Sherrie sims Turpin if you want to check me out first.

Sounds good to me, I’m glad you liked it.

My husband loved this recipe. I thought the chili powder was a little too much. Next time I plan to cut that back to maybe 2 tsp..
Jackie
This is good but not really like the original shake n bake glaze. Maybe too much chili powder?
Lady
This is my ‘go to’ for shake’n bake chicken or pork. Family enjoy it immensely.

Making right now for 2nd time. That’s a compliment of the highest order. Didn’t have lemons the 1st time so I used lemon pepper. Doing the same this time, using 1 tsp adds a little lemon flavor and a nice bit of heat.
Thanks!
