Pressure Cooker (Instant Pot) - Authentic Mexican Rice


  • 1 tablespooon olive oil
  • 1/2 cup diced onion
  • 2 tablespoons minced garlic
  • 1 cup long-grain rice
  • 1/2 cup tomato sauce
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon cumin
  • 1 1/2 cup water


  1. Start by adding the olive oil to your Instant Pot.

  2. Press the saute button, on your Instant Pot panel. Let the oil heat up for about 30 seconds.

  3. Add your diced onions.

  4. Saute for about 4 minutes, just enough to soften your onions. Mix in the garlic.

  5. Then add the rice, now you will want to saute this because it brings out a nice flavor and extra layer. Just get it to a golden brown color.

  6. After about 3 minutes, add the water.

  7. Then mix in the tomato sauce.

  8. Add your spices and mix well.

  9. Add your lid, locking it into position and making sure it's sealed. Set manual high pressure to 7 minutes.

  10. Allow a natural release, when the time is done. 

  11. Carefully, remove your lid (Remember if all of the pressure has been released it will be easy to remove)

  12. Mix well, after you remove the lid.

  13. Plate, serve and enjoy!
