Air Fryer, Blueberry Cobbler With Sugared Shortcakes

Ingredients

  • 2 pints fresh blueberries
  • 1/2 cup sugar
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 package refrigerated biscuits 1
  • 1 tablespoon sparkling sugar

Instructions

  1. In a large saucepan, combine the fresh berries, sugar, lemon juice, and lemon zest.  Mix well.

  2. Bring to a simmer, and continue to mix, until all of the sugar is melted away.

  3. Meanwhile, flattened the buttermilk biscuit, with a rolling pin, and choose a cookie cutter or glass, to make a shape.

  4. Place the cut-out shapes into a greased air fryer basket or air fryer tray and set in the air fryer for 5 minutes at 320 degrees F.

  5. Then placed the cobbler in a dish, top with a sparkling shortcake and enjoy!
