Shrimp Stuffed Baked Potatoes Recipe Tips
- Choose the right potatoes – Russet potatoes are best because they bake up fluffy inside and hold their shape when stuffed.
- Don’t overcook the shrimp – Shrimp only need a few minutes to cook. Overcooking makes them rubbery, so pull them out as soon as they turn pink.
- Season in layers – Add seasoning to both the potato filling and the shrimp for the best flavor in every bite.
- Use freshly grated cheese – Pre-shredded cheese doesn’t melt as smoothly. Shred your own for a creamier filling.
- Make them twice baked – After stuffing, return the potatoes to the oven (or air fryer) to melt the cheese and crisp the tops.
- Add extra mix-ins – Try bacon, green onions, bell peppers, or Cajun seasoning for a flavor boost.
- Meal prep friendly – Bake the potatoes and cook the shrimp ahead of time, then assemble and reheat when ready to serve.

Storing & Reheating Instructions
- Storing Instructions: Store leftover shrimp stuffed baked potatoes in an airtight container in the refrigerator for up to 3 days. Keep the shrimp and potatoes together so the flavors stay blended.
- Reheating Instructions: Reheat in the oven or air fryer at 350°F until warmed through for the best texture. Avoid the microwave if possible, as it can make the potatoes gummy and the shrimp rubbery.
Shrimp Stuffed Baked Potatoes Recipe Faqs
Can I use leftover shrimp for this recipe? Yes! Leftover cooked shrimp works great—just chop and fold it into the filling or warm it slightly before topping the potatoes.
What kind of potatoes work best? Russet potatoes are ideal since their skins hold up well and the insides turn fluffy when baked. Yukon Golds can work too, but they’re denser.
Can I make these ahead of time? Absolutely—bake the potatoes and cook the shrimp in advance, then assemble and reheat before serving. They taste just as delicious the next day.
Can I freeze shrimp stuffed baked potatoes? Yes, but freeze without the shrimp for best results. Add freshly cooked shrimp after reheating the potatoes.
How do I keep the shrimp from getting rubbery? Cook them quickly until just pink, then remove from heat. Overcooking is what makes shrimp tough.
Can I make these in the oven instead of the air fryer? Definitely! The air fryer gives you crispy potato skins in less time—perfect for weeknight dinners.
