Description

Shrimp Stuffed Baked Potatoes are creamy, cheesy, and topped with juicy shrimp for the perfect comfort food with a seafood twist. A delicious recipe for dinner or entertaining!

Ingredients 

  • 6 large Russet potatoes, scrubbed and dried
  • 1 teaspoon olive oil
  • 1/2 teaspoon salt
  • 1 pound Shrimp , peeled, deveined, and seasoned
  • 6 tablespoons Butter , divided
  • 1 cup Sour cream
  • 2 teaspoons butter
  • 1 1/2 cups Cheese , shredded cheddar or mozzarella
  • 3 cloves Garlic, minced
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/2 teaspoon Paprika, or Cajun seasoning
  • 2 tablespoons Parsley, or, green onions, or chives for garnish

Instructions

  • Rub 6 large Russet potatoes with 1 teaspoon olive oil and sprinkle with 1/2 teaspoon salt
  • Air fry at 400°F for 35–40 minutes, until fork tender.
  • Toss 1 pound Shrimp with 6 tablespoons Butter , 3 cloves Garlic, 1 teaspoon Salt, 1/2 teaspoon Black Pepper, and 1/2 teaspoon Paprika.
  • Air fry at 370°F for 6–8 minutes, shaking halfway.
  • Cut the baked potatoes in half lengthwise.
  • Scoop out the fluffy insides and mix with 2 teaspoons butter, 1 cup Sour cream <wprm-ingredient uid="4" removed="0">and 1 1/2 cups Cheese .
  • Spoon the creamy mixture back into the potato shells.
  • Top with cooked shrimp and extra cheese.
  • Return stuffed potatoes to the air fryer.
  • Cook at 370°F for 5 minutes, until cheese is melted and bubbly. Serve with a sprinkle of 2 tablespoons Parsley.
