One of the greatest things about the Instant Pot is that you do not have to watch the pasta, simply set and forget it. Today, while the pasta was being prepared in the Instant Pot, I turned my attention to the blackened chicken.
With a few add-ins of protein, you can create any pasta dish with the help of your Instant Pot.
Instant Pot Blackened Chicken Penne
Ingredients:
- 1 pound penne pasta
- 2 cups of water
- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breast, sliced
- 1 Poblano pepper. sliced
- 1/4 cup diced tomato
- 1 tablespoon blackening seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup Monterey Jack Shredded Cheese
- 8 tablespoons cream cheese
Simple Pasta Directions:
- In your Instant Pot, add the penne and water.
- Set manual high pressure for 4 minutes, making sure that the vent is sealed. When the time is done, do a quick release.
- Drain, reserving about 1/4 cup of pasta water.
- Mix in the shredded cheese, cream cheese, and reserved water, mix well.
- Add the blackened chicken, diced tomatoes, and poblano peppers (cooked as directed below)
- Plate, serve, and enjoy!
Simple Chicken Directions:
- In a large skillet, add the olive oil, chicken, pepper, diced tomato, blackening seasoning, salt, and black pepper.
- Cook the chicken until fully cooked, about 6 to 8 minutes, stirring constantly.
