And of course, I’m still an avocado toast with egg for breakfast kinda girl! But sometimes, if I’m feeling fancy, I’ll even take it a step further and make some air fried elote avocado toast.
This time, however, I really wanted to go low-carb, and try something that didn’t need me to use bread. And that’s when I thought of this recipe.

How to Make Easy Air Fryer Stuffed Avocado Recipe

Step 1: Start by cutting your avocados in half and removing their pits. Now, use a spoon to scoop out some of the flesh, but not entirely.
Step 2: Season the avocado halves with some salt, pepper and other seasonings of your choice.

Step 3: Prepare your chosen filling in a bowl. This can be anything you prefer.

Step 4: Stuff the avocado boats with the filling, pressing it gently to pack it in.
Step 5: Spray the avocado boats with cooking spray and transfer them to the Air Fryer basket, filling side up. Set air fryer temperature to 350 degrees F, and set cook time for 5-8 minutes or until the filling is warmed up and the avocado flesh has a bit of crispness. Top the avocados with sour cream, salsa or any other toppings of your choice and serve immediately.

Tips & Tricks to Make Stuffed Avocado in the Air Fryer
- Avocados are the key ingredient for this recipe, so make sure you pick ones that are ripe and firm, but not too mushy.
- Remember to preheat your Air Fryer before you add in the avocados. This helps them get that crispy exterior you’re looking for.
- Scoop the avocados just enough to create a well for the filling. If you scoop out too much of the flesh, the fruit will collapse when you start to fill it up. Also remember not to add too much of the filling, or it will turn the fruit mushy.
- For extra flavor, season the avocado wells with some salt and pepper before you start filling them up.
- These air fried stuffed avocados are best made and served fresh, so make sure you serve them immediately after they’re done cooking.

Storage Instructions
Refrigeration: If you have some leftovers, transfer them to an airtight container and refrigerate them for up to 2 days. I wouldn’t recommend storing them beyond that point, as the filling and the avocado boats can start to get spoilt.
Reheating: Use the microwave or your Air Fryer to reheat the leftovers until they’re nice and warm.
Serving Ideas & Suggestions
Enjoy these air fried stuffed avocados as a side dish with your Tex-Mex mains like Mexican chicken casserole or a weight watcher’s chicken burrito bowl.
Make it a part of your low carb meal by teaming it up with some air fried chicken tenders or chicken caprese foil packets.

- 2 large avocados
- 2 large eggs,

- 1/4 teaspoon black pepper
Instructions
- Begin by cutting the 2 large avocados in half and removing the pits. Scoop out a bit of the flesh to create more room for the filling, if necessary.
- Lightly season the avocado halves with 1 teaspoon Salt , 1/4 teaspoon black pepper, and any other desired seasonings like garlic powder or a squeeze of lemon juice.
- Mix your chosen filling ingredients in a bowl. This could be a combination of cooked meats, 2 large eggs, beans, vegetables, and 1/4 cup cheddar cheese Season the mixture according to your preference.
- Spoon the filling into the cavity of each avocado half, pressing gently to pack it in.
- Preheat your air fryer to approximately 350°F (175°C).
- Lightly spray the air fryer basket with cooking spray to prevent sticking. Place the stuffed avocado halves in the basket, cut side up.
- Air fry for about 5-8 minutes, or until the filling is heated through and slightly golden on top.
- Once done, carefully remove the stuffed avocados from the air fryer.
