Today, I made this while the family was busy reading the paper and playing games on the computer. It’s a great way to start any morning.

If you are looking for a great quick bread recipe, this is one of my favorites; you can either leave it plain or top it off with some lemon glaze. (recipe for the glaze is below)

Lemon Blueberry Bread

This loaf of Air Fryer Lemon Blueberry Bread is amazing. It’s the perfect morning treat when you pair it with a hot cup of coffee.

The only recommendation I would make if you wanted to make this in your air fryer is to use a mini loaf pan, so the middle cooks perfectly. 

If you have not baked yet in the Air Fryer, it’s super simple, and it takes about 1/2 the time of a traditional oven, without the need to preheat.

  • Butter
  • Granulated Sugar
  • Eggs
  • Milk
  • All-Purpose Flour
  • Baking Powder
  • Salt
  • Lemon Juice
  • Fresh Blueberries

How To Make Air Fryer Lemon Blueberry Bread

In a large mixing bowl, cream the butter and sugar together. Add the eggs and milk to the creamed sugar/butter. Mix in the flour, baking powder, salt, lemon juice, mixes well. Fold in the blueberries.

Greased Loaf Pan

Pour the batter into a greased air fryer-safe pan. Set the pan into the air fryer, and set the temperature to 320 degrees F for 20 minutes. When the time is up, place a toothpick in the loaf, and check to see that the toothpick comes out clean. If not, add another 5 minutes.

Note:  The exact time will depend on the air fryer model you have and the pans you are using. I highly recommend using mini loaf pans as they do better in the air fryer than the larger loaf pans. You will often find the middle not cooking when using the larger loaf pans.

Can this bread be frozen? 

Yes, this is a great recipe to make ahead, especially if you meal plan. To freeze, let the bread cool to room temperature, and then wrap in saran wrap and then a layer of foil. Place the bread into the freezer. 

It will stay good for about 1 to 2 months.  

To use from frozen, place the frozen bread into the refrigerator to thaw. It will usually require 12 to 24 hours.

Can I use frozen blueberries? 

Yes, this is a great place to use those frozen blueberries. My advice would be not to thaw. Otherwise, the batter will become soggy.

Can I use a different type of berry?

The most common question is about blackberries, strawberries, and raspberries. They should work the same. 

How should this bread be stored? 

Once the e bread is cooked, let it cool to room temperature and wrap with saran wrap. If you leave it on the counter, it will last for about 2 to 3 days. 

If you want to extend the Air Fryer Lemon Blueberry Bread life, place it into the refrigerator, where it will last for about a week.

Description

This is such an easy recipe and only requires a few ingredients. The air fryer does a great job of making this bread light and airy. I highly recommend using a mini pan for this loaf, as it cooks all the way through. I used fresh blueberries, but you can easily switch them out for frozen

Ingredients 

  • 1/2 cup butter
  • 3/4 cup sugar
  • 2 large eggs
  • 1/2 cup milk
  • 1 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons lemon juice
  • 1 1/2 cup blueberries, fresh

Instructions

Notes

To Make The Lemon Glaze:
1 cup powdered sugar
2 tablespoons lemon juice
Mix the powdered sugar and the lemon juice. Once the lemon blueberry bread has cooled, drizzle the icing over the blueberry lemon bread. As the glaze cools, it will harden.
 
Note: Depending on the size of the pans you use, you can either make 3 mini loaves or one regular size loaf.
