Once I made my first batch of granola in the air fryer, I stopped buying it at the store. It takes about 15 minutes start to finish, you don’t have to heat up the whole oven for a small batch, and you end up with those big golden clusters that cost a fortune in a bag. It’s earned a permanent spot in my air fryer breakfast rotation, right alongside my air fryer baked oatmeal and oatmeal bites. This recipe is my reliable base — hearty oats, toasted nuts, a little honey, and warm cinnamon — and it’s endlessly customizable.

Why You’ll Love This Recipe

  • Fast. From bowl to basket to breakfast in about 15 minutes — no 45-minute oven bake.
  • Crunchy clusters. A simple press-and-cool trick gives you the chunky pieces store-bought granola charges extra for.
  • Naturally sweetened. Just honey or maple syrup — no refined sugar required.
  • Completely customizable. Swap the nuts, change the dried fruit, add chocolate, make it vegan or nut-free.
  • Cheaper and cleaner than a bag of granola, with no preservatives or mystery ingredients.

Why Make Granola in the Air Fryer?

The air fryer’s circulating heat toasts oats fast and evenly, so you get crisp, golden granola in a fraction of the oven’s time — without warming up your whole kitchen. It’s the same reason I reach for the air fryer for so many easy air fryer breakfast recipes: it’s quick, it’s hands-off, and it’s perfect for small, fresh batches, which is how granola tastes best. If you’d rather use the oven, I’ve included instructions for that below.

Ingredients You’ll Need

Air fryer granola ingredients measured into bowls: rolled oats, chopped nuts, coconut flakes, honey, oil, cinnamon, and salt.

The full measurements and printable instructions are in the recipe card at the bottom of this post.

  • Old-fashioned rolled oats — the foundation. They crisp up beautifully and form clusters. (See the FAQ for why quick oats don’t work.)
  • Raw nuts — almonds, pecans, cashews, or a mix. They toast right alongside the oats for deep, nutty flavor. If you love that toasty crunch on its own, my air fryer roasted almonds use the same idea.
  • Honey or maple syrup — binds everything together and caramelizes into crisp clusters. Maple keeps it vegan.
  • Coconut oil or a neutral oil — helps the granola brown evenly and adds richness. (Prefer to skip it? Try my air fryer granola with no coconut oil.)
  • Cinnamon, nutmeg, and a little salt — warmth and balance. The salt is what makes the sweetness pop.
  • Vanilla extract — rounds out the flavor. For a vanilla-forward version, see my air fryer vanilla granola.
  • Coconut flakes (optional) — for extra crunch and a toasty, golden finish.
  • Dried fruit and chocolate chips (optional, added after cooling) — cranberries, raisins, chopped dates, or dark chocolate.

How to Make Air Fryer Granola

An air fryer basket lined with a fitted sheet of parchment paper.

Step 1: Preheat and line the basket

Preheat the air fryer to 325°F (160°C). Cut a piece of parchment paper to fit the bottom of the basket, leaving room around the edges so air can still circulate.

Rolled oats, chopped nuts, and cinnamon tossed together in a large glass mixing bowl.

Step 2: Mix the dry ingredients

In a large bowl, combine the rolled oats, chopped nuts, coconut flakes, cinnamon, nutmeg, and salt. Stir to distribute the spices.

Step 3: Add the wet ingredients

In a small bowl, whisk together the melted oil, honey (or maple syrup), and vanilla. Pour over the dry ingredients and toss with a wooden spoon until every oat and nut is evenly coated.

Step 4: Spread and press

Transfer the mixture to the lined basket and spread it into an even layer. Gently press it down with the back of the spoon — this is the trick to getting big clusters instead of loose oats. Don’t overcrowd; if your air fryer is small, cook in two batches.

Step 5: Air fry

Air fry at 325°F (160°C) for 12–15 minutes. Check at the 7–8 minute mark. For the chunkiest clusters, resist stirring — just rotate the basket if your air fryer browns unevenly. If you prefer looser granola, give it one gentle stir halfway through. Watch the last few minutes closely, since coconut flakes and edges brown quickly.

Step 6: Cool completely

This is the most important step for crunch. Let the granola cool completely — about 30–45 minutes — without stirring. It firms up and crisps as it cools, and leaving it undisturbed keeps the clusters intact.

Step 7: Add the mix-ins

Once fully cool, stir in the dried fruit and chocolate chips. (Adding them now, rather than during cooking, keeps fruit chewy and chocolate from melting.) Break into clusters and store.

Tips for the Best Air Fryer Granola

  • Use old-fashioned rolled oats, not quick or steel-cut. Quick oats turn powdery; steel-cut never soften enough. (They’re also my go-to for air fryer baked oatmeal for the same reason.)
  • Don’t overcrowd the basket. A thin, even layer browns evenly. Cook in batches if needed.
  • Press it down and leave it alone if you want clusters. Stirring breaks them up.
  • Let it cool fully before deciding it’s not crunchy — granola is soft and pliable when hot and crisps as it cools.
  • Add dried fruit and chocolate after cooling, never before, so they don’t scorch or melt.
  • Watch the final minutes. Air fryers run hot and granola goes from golden to burnt fast.

Variations and Substitutions

  • Vegan: Use maple syrup instead of honey.
  • Nut-free: Swap nuts for pumpkin seeds, sunflower seeds, and extra coconut.
  • Grain-free: Replace oats with a mix of chopped nuts and seeds; reduce time to 8–10 minutes and watch closely.
  • Chocolate: Add a tablespoon of cocoa powder to the dry mix, or stir in dark chocolate chips after cooling.
  • Vanilla-forward: Lean into the vanilla like my air fryer vanilla granola.
  • Coffee-shop style: If you love that hearty, clustered coffee-shop granola, try my copycat Panera granola.
  • Protein boost: Add a scoop of protein powder or a handful of hemp seeds to the dry mix.
  • Extra spice: Add a pinch of ginger, cardamom, or pumpkin pie spice.

How to Serve It

Spoon it over yogurt, pour milk over it like cereal, sprinkle it on smoothie bowls, or just snack on it by the handful. It’s also a great topping for baked fruit or ice cream. I love a scoop over a warm bowl of air fryer brown sugar baked oatmeal or strawberry oatmeal for crunch, and it makes a great grab-and-go option in any kid-friendly breakfast lineup.

How to Store Air Fryer Granola

  • If it loses its crunch: Spread it on a tray and refresh it in the air fryer at 300°F (150°C) for 3–5 minutes, then cool.
  • Room temperature: Cool completely, then store in an airtight container or glass jar for up to 2 weeks.
  • Freezer: Freeze in a freezer-safe bag (press out the air) for up to 3 months. Thaw at room temperature.

Air Fryer Granola Recipe Faq’s

Can I make this in any air fryer? Yes — basket-style and oven-style both work. Cooking times vary slightly by model, so check early the first time and adjust.

Why isn’t my granola crunchy? It almost always crisps up as it cools. If it’s still soft after cooling, it needs another 2–3 minutes in the air fryer. Make sure you’re using rolled oats, not quick oats.

How do I get big clusters? Press the mixture down firmly before cooking, don’t stir while it cooks, and let it cool completely undisturbed before breaking it apart.

Can I double the recipe? Yes, but cook it in batches in a thin layer. Crowding the basket steams the granola instead of toasting it.

Can I make this in the oven instead? Yes. Spread on a parchment-lined sheet and bake at 325°F (160°C) for 20–25 minutes, stirring once halfway, then cool completely.

Is air fryer granola healthy? It’s whole-grain oats and nuts, naturally sweetened, with no preservatives — generally lighter than store-bought. You control the sugar and oil.

Description

Crunchy, naturally sweetened homemade granola made in the air fryer in about 15 minutes. Toasty oats, golden nuts, and warm cinnamon — fully customizable and perfect over yogurt or by the handful.

Ingredients

  • 2 cups old-fashioned rolled oats
  • 1/2 cup raw nuts, almonds, pecans, or cashews, roughly chopped
  • 1/4 cup unsweetened coconut flakes, optional
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 3 tablespoons honey, or maple syrup for vegan
  • 2 tablespoons coconut oil, or neutral oil, melted
  • 1 teaspoon pure vanilla extract
  • 1/3 cup dried cranberries or raisins, added after cooling
  • 1/4 cup chocolate chips, optional (added after cooling)

Instructions

  • Preheat the air fryer to 325°F (160°C). Line the basket with a piece of parchment paper cut to fit, leaving room at the edges for airflow.
  • Combine the dry ingredients: In a large bowl, stir together the oats, chopped nuts, coconut flakes, cinnamon, nutmeg, and salt.
  • Add the wet ingredients: In a small bowl, whisk the melted oil, honey, and vanilla. Pour over the oat mixture and toss until evenly coated.
  • Spread and press: Transfer to the lined basket in an even layer and gently press down with the back of a spoon for clusters. Don’t overcrowd — cook in batches if needed.
  • Air fry at 325°F (160°C) for 12–15 minutes, checking at 7–8 minutes. For clusters, don’t stir; for looser granola, stir once halfway. Watch the last few minutes so it doesn’t burn.
  • Cool completely in the basket or on a tray, about 30–45 minutes, without stirring. The granola crisps as it cools.
  • Add mix-ins: Once fully cool, stir in the dried fruit and chocolate chips. Break into clusters and store in an airtight container.
