Easy Southern Hush Puppies.
If you are not familiar with hush puppies, I will try to give you a crash course.
Hushpuppies are a true southern dish. When you go south and hit usually a seafood restaurant, you will be served a basket of them. They are usually deep-fried (lots of oil) and some southern like them with add-ins, whether it is diced peppers, herbs, or corn kernels. Everyone has a special way they like them, and everyone likes them a bit differently.
Today, I tried to recreate a dish, my family and I had when we were on vacation in the south. But, I did not deep fry them, I used my air fryer, and I am happy to say they came out golden delicious and soft and really a great dish.
They go with anything, but my kids really love them as a breakfast treat. Go figure. But whatever you serve them with, they are really great with a big old slab of butter in the middle.
Today’s Ingredients-
- 1 cup buttermilk
- 2 eggs
- 1 teaspoon salt (omit if using salted butter)
- 1/4 cup melted unsalted butter
- 1 1/2 cups flour
- 1 1/2 cups yellow cornmeal
- 1/2 cup sugar
- 1 teaspoon baking soda
- 1 jalapeno pepper, diced
Here are the step by step instructions to make this in your very own air fryer–
In a large mixing bowl, mix together the buttermilk, melted butter, eggs, and salt.
Then mix in the flour, cornmeal, sugar, and baking soda.
Mix well.
Fold in the diced jalapenos.
Then grease you air fryer pan ( I found this at Williams Sonoma, it’s called the Bitelet pan) with olive oil spray.
Fill the cavities with the batter.
Set the pan into the air fryer, and set the temperature to 350 degrees F, (air fryer setting) for 5 minutes. Make sure they are fully cooked before you remove, the actual time will depend on the air fryer you are using.
Plate, serve, and enjoy!
