Today, my husband and I were home and I thought, I really want a muffin, but I don’t want a whole batch, just one or two, so I came up with this,

  • 1/2 cup of all-purpose flour
  • 1 teaspoon baking powder
  • 1 tesapoon ground cinnamon
  • 1/2 teaspoon salt (omit if using salted butter)
  • 3 tablespoons brown sugar
  • 2 tablespoons melted butter
  • 1 egg yolk
  • 3 tablespoons heavy cream
  • 1 teaspoon vanilla extract
  • 1/2 cup diced apples

Crumb Topping:

  • 4 tablespoons flour
  • 4 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 3 tablespoons butter

  1. In a small bowl, mix together the flour, baking powder, ground cinnamon, sugar, and salt.
  2. Add the egg, melted butter, vanilla extract, heavy cream, and mix well.
  3. Add in the diced apples, and mix well.
  4. Spray your ramekins or another air fryer safe (remember air fryer safe is generally oven safe) with olive oil spray. Scoop your batter into the greased ramekin.
  5. Then make your topping in a small bowl, mix together the flour, brown sugar, ground cinnamon, and sugar. Sprinkle on top. Then set the ramekins into the air fryer for 12-14 minutes at 320 degrees F, air fryer setting.
  6. Plate, serve, and enjoy!
