Air Fryer Homemade Corn Muffins are amazingly easy to make. They are the perfect treat to go with any meal, and they go amazingly well with BBQ and chili, my two favorite meals.
They are tender, and they are best when served hot with a slab of butter on top. Today, I used Jiffy Cornbread Muffin Mix to make these, and the mix is probably one of the cheapest things you can buy at the grocery store. But the mix delivers lots and lots of flavor.
One of the best things about using your air fryer to make these muffins is to set the muffin tin into the pan and forget it, which lets you run around and make your dinner in peace.

What You Need To Make Air Fryer Homemade Corn Muffins–
- 1 package Jiffy Corn Muffin Mix
- 1 egg
- 1/3 cup milk
How To Make Air Fryer Homemade Corn Muffins–
Pour the ingredients into a small mixing bowl. Then use a whisk to whisk until well combined.
Then, spoon the batter into the prepared muffin pan, fill about 3/4 way full. Finally, air fryer for about 12 minutes at 320 degrees F (air fryer setting)
At this time, cool the muffins for a few minutes, then top with a pat of butter.
How to Freeze Corn Muffins
These can be frozen after air frying them. However, let the muffins cool to room temperature, then add the muffins to a Ziploc bag or airtight container. They will stay for about 1 to 2 months.
To use, remove from the freezer and leave on the countertop to thaw. If you would like to reheat in the air fryer, place them in the air fryer for 1-2 minutes at 310 degrees F, air fryer setting.

Air Fryer Homemade Corn Muffins
These are truly delicious, my kids love them, and I love having a batch on hand to serve with dinner. They go well with just about anything from chili to pork chops.
Ingredients
- 1 package Jiffy Corn mix
- 1 egg
- 1/3 cup milk
Instructions
- Mix all of the ingredients.
- Then pour the muffin mix into the greased muffin tin or silicone holders and air fry at 320 degrees F for 12 minutes. (air fryer setting)
- Let cool before removing the muffins from the muffin tin.
- Plate, serve, and enjoy!
