Air Fryer Famous Dave’s Corn Muffin Copycat makes soft, fluffy, lightly sweet corn muffins just like the restaurant favorite. Easy, quick, and perfect for barbecue sides or breakfast.
Ingredients
1 3/4cupcornmeal
1 3/4cupall-purpose flour
2teaspoonbaking powder
1/2teaspoonsalt
1/4teaspoonbaking soda
2largeeggs
3/4cupgranulated sugar
1/4cupshortening
1/2teaspoonpure vanilla extract
3/4cupmilk
1/4cupbuttermilk
1/3cupvegetable oil
3tablespoonshoney
Instructions
In a medium bowl, whisk together the 1 3/4 cup cornmeal, 1 3/4 cup all-purpose flour, 2 teaspoon baking powder, 1/2 teaspoon salt and 1/4 teaspoon baking soda. Set aside.
In a large bowl beat together the 2 large eggs, 3/4 cup granulated sugar, 1/4 cup shortening and 1/2 teaspoon pure vanilla extract.
Once combined add in the 3/4 cup milk, 1/4 cup buttermilk, 1/3 cup vegetable oil and 3 tablespoons honey. Make sure the mixture is combined very well.
Add in the dry ingredients and mix until fully incorporated.
Place a heaping tablespoon of the muffin mixture into a pre-greased muffin tin that fits your air fryer.
Set air fryer temperature to 350 degrees F, and set cook time for 9-12 minutes until cooked through and golden brown.
Oven Method: Preheat the oven to 375°F. Fill a greased muffin tin about ¾ full and bake for 15–18 minutes, or until golden and a toothpick inserted in the center comes out clean.
Mini Muffins: Use a mini muffin pan and cook at 350°F for 7–9 minutes, checking early for doneness.
Skillet Corn Muffins: Spoon batter into a lightly greased skillet over medium-low heat, cover, and cook until set and lightly browned on the bottom, then flip briefly if needed.
