What Is Creme Brulee?

Creme Brulee is a traditional French dessert that reminds me of a simple baked pudding. It has a custard-like consistency and a caramelized layer of granulated sugar.

It is a lot like the Mexican Dish, Flan.

Since it’s usually baked in ramekins, this lent its way to air frying. The caramelized sugar did very well in the air fryer. You can traditionally serve it as is or with a serving of fruit.

Can you make creme brulee in an air fryer?

Yes, you can make creme brulee in an air fryer! While traditional creme brulee is typically baked in the oven using a water bath, the air fryer can provide a convenient and efficient alternative.

Ingredients Needed For Air Fryer Flan

Remember the step-by-step directions and detailed ingredient list are below in the printable recipe card at the bottom of the post, as well as the nutritional information.

  • Heavy Cream: This forms the velvety and creamy base of the dessert, offering a luxurious texture.
  • Egg Yolks: Egg yolks give the custard its rich flavor and help it set to the right consistency. Discard the egg whites.
  • Granulated Sugar: Used both in the custard base for sweetness and sprinkled on top for the signature caramelized crust.
  • Pure Vanilla Extract: This provides the classic, aromatic flavor characteristic of traditional crème brûlée. You can also use vanilla bean paste for a rich vanilla flavor.
  • Kosher Salt: A pinch helps balance the sweetness and enhance the overall flavors of the dessert.
  • Serving: Serve with fresh berries or ice cream.

Creme Brulee in Pan Heating

Add the cream, vanilla, and salt in a saucepan over medium heat; whisk constantly with a wire whisk. Cook until the cream reaches a simmer and remove from the heat.

Whisk the eggs and sugar together in a large bowl until combined. Temper the eggs by slowly pouring 1/2 cup of the warm cream mixture into the eggs while whisking constantly.

Step 2: Fill The Ramekins

Pour the tempered egg mixture into the remaining cream mixture, constantly whisking to prevent clumps from forming from the eggs. Divide the custard mixture into the individual ramekins.

Step 3: Cook In Air Fryer

Set the ramekins into the preheated air fryer basket, and set the cook time for 20-25 minutes or until the filling is cooked. Depending on the size of your air fryer basket, you may have to cook in batches. Remove and allow to cool completely.

Step 4: Carmelize The Sugar

To create the caramelized crust, evenly sprinkle the remaining sugar over the top of each custard. Use a small kitchen blow torch to caramelize the sugar, or place the ramekins under your oven broiler for 3-5 minutes.

Step 5: Serving

Top the delicious creme burlee with some fresh berries and serve immediately.

Pro Tips For Easy Air Fryer Creme Bruelle

Here are some pro tips to ensure your air fryer crème brûlée turns out perfect every time:

  • Use Fresh Ingredients: Fresh eggs and high-quality heavy cream will make a difference in the texture and flavor of your crème brûlée.
  • Temper Eggs Carefully: Pour the hot cream into the egg mixture while constantly whisking to ensure you don’t end up with scrambled eggs.
  • Strain the Custard: Always strain the mixture through a fine-mesh sieve to ensure a silky-smooth custard without lumps or cooked egg bits.
  • Even Sugar Layer: When adding sugar to the caramelized top, ensure it’s an even layer. This will give a uniformly crispy crust when torched.
  • Keep Water Away: While some oven recipes call for a water bath, you won’t need it in an air fryer. However, ensure the ramekins are completely dry before adding the custard to prevent water from getting into your dessert.
  • Check Doneness: The center should be slightly jiggly while the edges are set. Overcooking can produce a rubbery texture, so watch during the final minutes.
  • Cooling is Key: After cooking, allow the crème brûlée to reach room temperature before placing it in the fridge. This will prevent condensation from forming on the surface.
  • Torch Just Before Serving: Only caramelize the sugar before you’re ready to serve. This ensures the sugar crust remains crisp and doesn’t become soggy.
  • Alternative Topping: If you’re in a pinch without granulated sugar, you can use brown sugar for a slightly different but equally delicious caramelized flavor.
  • Experiment with Flavors: Classic crème brûlée is wonderful, but don’t be afraid to experiment. Add a dash of citrus zest, a hint of lavender, or even a touch of espresso powder to change the flavor profile.
  • Ramekin Size: The size and depth of your ramekin can affect cooking time. Shallower ramekins may cook faster than deeper ones. Always watch them during their first time in the air fryer to gauge the perfect cooking duration for your dish.

Can you caramelize creme brûlée in air fryer

While the traditional method calls for using a blow torch, today, I used the heating element on top of the air fryer. Which worked like a charm.

Add enough sugar to make it a single layer. Then, frequently check on the Air Fryer Creme Brulee to ensure they do not go from caramelized to burnt. I usually stand near the air fryer to ensure my Creme Brulee is perfect.

Serve with an additional sprinkle of sugar or my favorite sparkling sugar right before serving.

Do I need a torch for the caramelized top?

While a kitchen torch will give the best results for a crispy caramelized top, you can also use the broil function of your oven for a few minutes. Just keep a close eye on it to avoid burning.

Can I make crème brûlée ahead of time?

Absolutely! The custard can be made up to two days in advance. Just remember to add the sugar and caramelize it right before serving.

Why did my custard turn out rubbery?

The custard can become rubbery if overcooked. It’s important to cook until the edges are set, but the center is still slightly jiggly.

Can I use low-fat milk instead of heavy cream?

Heavy cream is recommended for the richest texture and flavor. Using low-fat milk can alter the consistency and taste of the dessert.

Can I flavor the crème brûlée differently?

Definitely! While vanilla is traditional, you can experiment with other flavors like coffee, chocolate, citrus, or even lavender.

How long should I cool the crème brûlée before refrigerating?

Let the crème brûlée sit at room temperature for about 30 minutes to an hour before transferring to the fridge.

Is it normal for water to collect on top after refrigerating?

A little condensation can form on the surface, especially if the crème brûlée is covered while still warm. Blot it away gently with a paper towel.

How long can I store crème brûlée in the refrigerator?

Crème brûlée is best consumed within 2-3 days, but it can last up to 4 days in the fridge.

Is it necessary to strain the mixture?

Straining ensures a silky-smooth texture by removing any potential lumps or bits of cooked egg. For the best texture, it’s recommended.

Can I use ramekins of different sizes?

Yes, but the cooking time might vary. Shallower ramekins may require less cooking time, while deeper ones might need longer.

While you may have some great dishes in your pantry or cupboards, some of my favorite ways to bake in the air fryer are with ramekins.

Notes

Storing, Freezing, and Reheating Air Fryer Crème Brûlée:
Storing:
  1. Cooling: After cooking the crème brûlée in the air fryer and allowing it to cool at room temperature, avoid caramelizing the sugar on top if you plan to store it for later use.
  2. Cover: Use plastic wrap or a suitable lid to tightly cover each ramekin.
  3. Refrigerate: Place the covered ramekins in the refrigerator for at least 4 hours or up to 2-3 days. This will help the custard set properly.
Freezing:
  1. Without the Sugar: If you plan to freeze crème brûlée, ensure you do so without the caramelized sugar layer on top.
  2. Wrap and Seal: Wrap each ramekin tightly in both plastic wrap and aluminum foil. This prevents freezer burn and any strong freezer smells from seeping into the dessert.
  3. Duration: Crème brûlée can be frozen for up to a month.
Reheating and Serving:
  1. From the Refrigerator: If your crème brûlée is simply stored in the fridge, you don’t need to reheat it. Simply take it out, let it come to a slight room temperature, sprinkle a thin layer of granulated sugar on top, and use a kitchen torch to caramelize the sugar until it’s golden and crispy.
  2. From the Freezer: Remove the crème brûlée from the freezer and discard the plastic wrap and aluminum foil. Place it in the refrigerator for several hours or overnight to thaw. Once thawed, follow the above steps to caramelize the sugar on top and serve.
  3. Avoid Microwaving: It’s best not to microwave crème brûlée as it can ruin the texture. Stick to the torch method for caramelizing the top.
Note: Always consume crème brûlée within 2-3 days for the best flavor and texture if refrigerated, and within a month if frozen. Also, always ensure it’s stored in a way to prevent other food smells from getting absorbed.
