One overripe banana, four tablespoons of flour, and about nine minutes in the air fryer. That’s the whole recipe.

This air fryer banana mug cake is genuinely eggless and dairy-free — not “adaptable to be,” but actually made without eggs, milk, or butter from the start. The banana does the binding work that an egg normally would, which is why the crumb comes out soft and dense, closer to a slice of banana bread than a fluffy cake.
It’s built for one person and one banana. If you’ve got three bananas going brown on the counter, make the full-size air fryer banana cake instead.

Why This One Works
- Five ingredients, all shelf-stable except the banana
- No eggs, no milk, no butter, no oil — it’s vegan as written
- One bowl and one fork. No mixer, no measuring out a full loaf pan
- Portioned for one, so there’s no half-eaten loaf going stale by Thursday
Ingredients
The full printable recipe card with measurements and nutrition is at the bottom of the post.

- 1 ripe banana — the spottier the better. Brown-speckled bananas mash smoother and taste noticeably sweeter, which matters a lot here because there’s only 2 teaspoons of added sugar.
- All-purpose flour — provides the structure. This is the ingredient to measure carefully; see the troubleshooting section below.
- Granulated sugar — just enough to round out the banana. Ripe bananas do most of the sweetening.
- Baking powder — the leavening. There’s no egg to trap air, so this is what keeps the cake from turning into a paste.
- Pure vanilla extract — rounds out the banana flavor.
- A pinch of salt — sharpens everything else. Use an actual pinch, about ⅛ teaspoon. More than that and you’ll taste it.
How to Make Banana Mug Cake in the Air Fryer

Step 1. Mash the banana with a fork until it’s smooth and no lumps remain. Lumps of unmashed banana turn into wet pockets in the finished cake, so take an extra fifteen seconds here.

Step 2. Add the vanilla, flour, sugar, baking powder, and salt directly to the mashed banana. Mix until the flour is just incorporated and you don’t see dry streaks. Don’t beat it — overmixing develops gluten and makes the crumb tough.

Step 3. Spray a 6-ounce oven-safe ramekin or mug with cooking spray and add the batter. Fill it no more than two-thirds full. The batter rises more than you’d expect and will spill over the rim if you overfill it.

Step 4. Set the ramekin in the air fryer basket. Cook at 300°F for 6 to 9 minutes, until the top is golden and springs back when you press it lightly.
Step 5. Let it sit for 3 to 5 minutes before eating. It keeps cooking as it rests, and it comes out extremely hot.

Notes From Testing
- Preheating: Not necessary at 300°F. If your air fryer runs hot or you preheat by habit, start checking at the 5-minute mark.
- Your air fryer will differ. Basket-style models cook faster than oven-style ones, and a shallow, wide ramekin finishes a couple of minutes ahead of a tall narrow mug with the same amount of batter. The visual cue matters more than the clock: golden top, springy center.
- Don’t use metal. A metal travel mug or tumbler won’t heat the same way and isn’t safe in most air fryers. Ceramic or oven-safe glass only.
- Doneness test: A toothpick in the center should come out with a few moist crumbs but no wet batter. Because there’s no egg, a slightly underbaked center stays gummy rather than setting up as it cools.
Troubleshooting
The center is gummy or dense. Almost always too much banana relative to flour. A “medium” banana ranges from about 90g to 130g of mash, which is a huge swing on a recipe this small. If yours was large, add an extra tablespoon of flour. Undercooking causes this too — give it another 2 minutes and check again.
It’s dry or crumbly. Overbaked, or the flour was packed into the measuring spoons. Spoon flour into the measure and level it off rather than scooping directly from the bag.
It overflowed the ramekin. Two-thirds full, maximum. Split the batter between two smaller ramekins if you need to.
The top browned before the middle cooked. Your air fryer runs hot. Drop to 280°F and add 2 to 3 minutes.

Variations
- Chocolate chips: Fold in a tablespoon before cooking. If chocolate is what you’re actually after, the air fryer chocolate chip mug cake is built around it.
- Chopped walnuts or pecans: A tablespoon adds the crunch that makes it taste more like real banana bread.
- Cinnamon: A generous pinch, plus a scrape of nutmeg. For a fuller version of that flavor, try the air fryer cinnamon nut swirl mug cake.
- Peanut butter: Swirl a tablespoon through the batter before cooking rather than mixing it in fully.
- Blueberries: A small handful, fresh or frozen. Frozen berries will add a minute to the cook time.
Frequently Asked Questions
Is this banana mug cake really eggless? Yes. There are no eggs, no milk, and no butter in the recipe as written, which also makes it dairy-free and vegan. The mashed banana provides both the moisture and the binding.
Can I make it gluten-free? Yes. Swap in a cup-for-cup gluten-free all-purpose blend at the same measurement. The texture comes out slightly softer.
Can I use a frozen banana? Yes, but thaw it completely and drain off the liquid that pools — frozen bananas release a lot of water and will make the batter too wet. Add an extra tablespoon of flour to compensate.
Can I make this in the microwave instead? Yes. Microwave on high for 60 to 90 seconds, checking at 60. The texture is softer and paler than the air fryer version, which develops an actual browned top.
Can I bake it in the oven? Yes. 350°F for 15 to 20 minutes, until a toothpick comes out with moist crumbs.
Can I double the recipe? Yes. Use one ramekin per serving rather than a single larger dish — the cooking time changes significantly if the batter is deeper. Leave about an inch of space between ramekins in the basket for air circulation.
How do I store leftovers? Cover and refrigerate up to 2 days. Reheat for 10 to 15 seconds in the microwave. It’s much better fresh.
What size mug should I use? A 6-ounce ramekin or a standard 8-ounce mug, filled no more than two-thirds. Check that it fits in your basket with the drawer fully closed before you mix the batter.
