Description

A single-serve banana bread mug cake made in the air fryer with five pantry ingredients — no eggs, no milk, and no butter.

Ingredients 

  • 1 banana, ripe
  • ½ teaspoon pure vanilla extract
  • 4 tablespoons all-purpose flour
  • 2 teaspoons granulated sugar
  • ½ teaspoon baking powder
  • teaspoon salt

Instructions

  • Mash the banana with a fork in a small bowl until smooth, with no lumps remaining.
  • Add the vanilla extract, flour, sugar, baking powder, and salt. Mix until just combined and no dry flour remains.
  • Spray a 6-ounce oven-safe ramekin or mug with cooking spray. Add the batter, filling no more than two-thirds full.
  • Place in the air fryer basket. Cook at 300°F for 6 to 9 minutes, until the top is golden and springs back when lightly pressed.
  • Rest 3 to 5 minutes before serving. Plate, serve, and enjoy.
