- 1 cup unsweetened pineapple juice
- 1/4 cup ketchup
- 1/2 cup soy sauce
- 1/2 cup brown sugar
- 2 teaspoons minced garlic
- 1 tablespoon ginger, grated
- 1 pound boneless, skinless chicken breast
- 1 teaspoon olive oil
- 1 large pineapple, slice into rings, and cut in half (semi-circles)
Serve with sliced green onions and fresh parsley
Instructions
- Add the 1 cup unsweetened pineapple juice, 1/4 cup ketchup, 1/2 cup soy sauce, 1/2 cup brown sugar, 2 teaspoons minced garlic, and 1 tablespoon ginger to a large mixing bowl. Mix well until well combined.
- Pour the marinade into a large bowl, add your 1 pound boneless, skinless chicken breast, and cover and refrigerator for about 2 hours
