This air fryer French onion grilled cheese has everything my son loves about French onion soup: jammy caramelized onions, a splash of beef broth, fresh thyme and nutty Gruyère, all pressed between buttery sourdough and crisped in the air fryer in about 8 minutes. The onions take patience, but you can make them days ahead. Once they’re ready, lunch is done faster than a skillet heats up.

If you’ve never made a sandwich this way, my Best Air Fryer Grilled Cheese walks through the basic method. This version builds on it with the flavors of the soup bowl.
What Makes a French Onion Grilled Cheese Taste Like the Soup
Three things carry the flavor over from the bowl. The onions are cooked low and slow until deep brown and sweet. Beef broth and thyme go into the pan at the end, which is what gives the onions that unmistakable “soup” taste. And Gruyère melts over the top, just like the cheese cap on a crock of soup. The toasted sourdough plays the part of the crouton.

Ingredients You’ll Need
Full amounts are in the printable recipe card below.

- Yellow onions: They have the right balance of sugar and bite for long cooking. Sweet onions work too and brown a little faster.
- Butter: For cooking the onions and for the outside of the bread.
- Beef broth: Deglazes the pan and adds the savory depth of French onion soup. Use vegetable broth to keep it meatless.
- Fresh thyme: A little goes a long way. Use 1/4 teaspoon dried if that’s what you have.
- Worcestershire sauce (optional): A few drops deepen the beefy flavor.
- Sourdough bread: Slices about 1/2 inch thick hold the onions without going soggy.
- Gruyère cheese: Shred it from a block. It melts smoother than pre-shredded cheese, which is coated to keep it from clumping. Swiss or provolone are good stand-ins.
One note on the old version of this recipe: “fried onions” here means caramelized onions, not the crispy canned kind. Crispy onions add crunch but not the sweet, jammy base this sandwich needs. If you want both, see the crunchy variation below.
How To Make French Onion Grilled Cheese in the Air Fryer

Step 1: Caramelize the onions. Melt 2 tablespoons of butter in a skillet over medium-low heat. Add the sliced onions and salt and cook, stirring every 5 minutes or so, until they are soft and deep amber, 35 to 45 minutes. Stir in the thyme, Worcestershire and beef broth, scrape up the browned bits, and cook until the liquid is absorbed. Season with pepper. Prefer a hands-off method? My air fryer caramelized onions use a small pan and a two-stage butter method so they turn soft and golden instead of dry.
Step 2: Butter the bread. Spread softened butter on one side of each slice, all the way to the edges.

Step 3: Build the sandwich. Place one slice butter-side down. Add a layer of Gruyère, then half the onions, then more Gruyère. Top with the second slice, butter-side up. Cheese on both sides of the onions is what glues the sandwich together.
Step 4: Air fry. Cook at 360°F for 4 minutes. Flip carefully with a wide spatula, then cook 3 to 4 minutes more, until both sides are deep golden and the cheese is melted. If the top slice lifts, pin it with toothpicks or set a small rack on top; the air fryer fan can move light bread.
Step 5: Rest and slice. Let it sit for 1 minute so the cheese sets, then cut in half.

Tips for the Best French Onion Grilled Cheese
- Make the onions ahead. Refrigerate them in a covered container for up to 4 days. Rewarm briefly before building the sandwiches so the cheese melts in time.
- Keep the onions dry. Cook the broth all the way down. Wet onions steam the bread from the inside.
- Take the cheese to the edges. That’s where you get the crisp, lacy cheese bits.
- Check at the flip. Air fryers vary, and thinner bread browns faster. Pull it a minute early if the first side is already dark.
- Try mayo outside. Swapping the butter for a thin layer of mayonnaise gives an even crisper crust, the same trick I use for my classic grilled cheese.
Variations
- Crunchy: Tuck a handful of homemade copycat French’s fried onions in with the caramelized onions for sweet and crunchy in every bite.
- Thick and garlicky: Build it on Texas toast, like my air fryer Texas toast grilled cheese.
- With beef: Add a thin seasoned patty and switch to rye, and you’re in air fryer patty melt territory.
- With mushrooms: Sauté sliced mushrooms with the onions. The same pairing makes my caramelized onion and mushroom quesadilla so good.

What To Serve With It
Go all in with a bowl of my copycat Applebee’s French onion soup for dunking. For a classic pairing, make air fryer tomato soup with roasted fresh tomatoes, or doctor up a can with my 10-minute trick for canned tomato soup.
Using Leftover Caramelized Onions
If you made a big batch of onions, they won’t go to waste. Spread them over air fryer French onion cheese bread or bake them into air fryer French onion dip.
Storing and Reheating
This sandwich is best right out of the air fryer. If you have leftovers, wrap them and refrigerate for up to 1 day. Reheat in the air fryer at 350°F for 3 to 4 minutes, flipping halfway, until the bread crisps again. Skip the microwave; it turns the bread chewy.

French Onion Grilled Cheese FAQs
What is the best cheese for French onion grilled cheese? Gruyère, since it’s the cheese used on French onion soup. It melts smoothly and tastes nutty. Swiss, provolone, or a mix of Gruyère and mozzarella also work.
Can I use store-bought caramelized onions? Yes. Jarred onions save 40 minutes. Warm them with a splash of beef broth and a pinch of thyme so they taste like the soup.
Can I use canned crispy fried onions instead? Not as the main filling. They add crunch but none of the sweet, soft texture. Use them as an extra layer instead.
Do I need to flip it? Yes. Most air fryers heat from the top, so flipping is what browns the bottom slice.
Is this vegetarian? Use vegetable broth and skip the Worcestershire, which usually contains anchovies. Traditional Gruyère is made with animal rennet, so check the label if that matters to you.
Can it be gluten-free? Use a sturdy gluten-free bread and check that your broth and Worcestershire are labeled gluten-free.
