- Salt: Enhances overall flavor and strengthens dough taste profile

- Butter: Creates rich layers and boosts flaky texture throughout
- Scallions: Provide fresh, sharp onion flavor in every bite
- Olive Oil Spray: Helps crisp edges and prevents sticking easily
How To Make Air Fryer Scallion Pancakes

Step 1: In a large bowl, whisk together the flour, sugar, and salt. Gradually add the hot water while stirring with a fork, then slowly mix in the cool water until a shaggy dough forms. Use your hands to bring the dough together, pressing it into a rough ball. Turn it out onto a lightly floured surface and knead for about 3 minutes until smooth and elastic. Cover and let the dough rest for 30 minutes.
While it rests, prepare the filling by mixing melted butter, flour, and salt until smooth, then set aside.

Step 2: Divide the dough into six equal pieces and roll each one into a smooth ball. Work with one piece at a time while keeping the remaining dough covered with plastic wrap so it doesn’t dry out. On a lightly floured surface, roll the dough out as thin as possible into a rough rectangular shape. Spread about one tablespoon of the filling over the surface, leaving a half-inch border around the edges, then sprinkle evenly with one-sixth of the chopped green onions.

Step 3: With the long side facing you, tightly roll the dough into a thin log. Pinch and seal the seams along the sides and length so everything stays closed. Coil the log into a spiral shape, tucking the end underneath to secure it. Cover with plastic wrap and repeat with the remaining dough pieces.

Step 4: Preheat your air fryer to 350°F. Take one dough spiral and gently press it flat with the palm of your hand on a clean surface. Use a rolling pin to roll it out into a 7–8 inch circle, keeping it even and not too thin.
Step 5: Lightly spray the air fryer basket with olive oil spray. Place the rolled pancake inside and spray the top lightly with oil. Air fry at 350°F for 5 minutes, flip, spray again, and cook for another 5 minutes until golden and crispy. Repeat with the remaining dough, cut into triangles if desired, and serve with the dipping sauce of your choice.

Air Fryer Scallion Pancakes Recipe Tips
- Don’t rush the dough rest – Letting it sit for 30 minutes makes it easier to roll and gives you better layers. Skipping it = tougher pancakes.
- Roll it thin, but not paper-thin – Too thick and they won’t crisp; too thin and you lose that chewy center.
- Seal the dough tightly – Pinch every seam so the filling doesn’t leak out while cooking.
- Oil is your best friend – Don’t be shy with the olive oil spray. It’s what gives you that golden, crispy finish.
- Flip for even crisping – Both sides need air fryer time, so don’t skip the flip step.
- Cook in batches if needed – Crowding the air fryer will steam the pancakes instead of crisping them.
- Serve immediately – These are best hot and fresh when the layers are still crisp and flaky.
Storing, Freezing and Reheating Instructions
- Storing: Store leftover scallion pancakes in an airtight container in the refrigerator for up to 3 days. Let them cool completely first so they don’t turn soggy.
- Freezing: Freeze cooked or uncooked pancakes by wrapping them tightly in plastic wrap and placing them in a freezer bag. They’ll keep well for up to 2 months without losing flavor or texture.
- Reheating: Reheat in the air fryer at 350°F for 3–5 minutes until hot and crispy again. Avoid the microwave if you want to keep that flaky, crunchy texture.

Green Onion Pancake Air Fryer Recipe Faqs
Can I make scallion pancakes in the air fryer? Yes, the air fryer works great for scallion pancakes and gives them a crisp, golden outside with soft, flaky layers inside. Just make sure to flip them halfway for even browning.
Do I need to use hot water for the dough? Hot water helps soften the flour and creates a more tender, chewy texture. It’s what gives scallion pancakes their signature layered bite.
Why are my scallion pancakes not crispy? They’re usually not crispy because they were under-oiled or overcrowded in the air fryer. A light spray of oil and proper spacing fixes most of that fast.
Can I make them ahead of time? Yes, you can prep and shape the dough ahead, then refrigerate or freeze it until ready to cook. This actually helps the flavors settle and makes cooking easier later.
What dipping sauce goes best? Soy sauce is the classic choice, but chili oil, garlic soy sauce, or even a sweet soy glaze all work really well. It really depends on how bold you want the flavor to be.
Can I reheat leftovers in the air fryer? Yes, reheat at 350°F for a few minutes until crisp again. The air fryer brings back that crunchy texture much better than the microwave.

Air Fryer Scallion Pancakes
Description
Ingredients
Dough:
- 2 cups all-purpose flour
- 2 teaspoons granulated sugar
- 1/2 teaspoon sea salt
- 1/2 cup hot water
- 1/4 cup cool water
Filling:
- 1/3 cup unsalted butter, melted
- 1/4 cup all-purpose flour
- 1/2 teaspoon sea salt
- 8 scallions, minced
Other:
- Olive Oil Spray
Instructions
- In a large bowl, whisk together the flour, sugar, and salt. Slowly pour in hot water while using a fork to stir it in. Slowly pour the in the cool water next, still using the fork. You should have what appears to be a very shaggy dough. Using your hands, press the dough together until it starts to form a ball. On a clean work surface lightly dusted with flour, knead the dough for about 3 minutes until a smooth dough forms. Cover the dough and let rest for 30 minutes.
- While the dough rests, make the filling by whisking together the melted butter, flour, and salt. Set aside.
- Cut the dough into six even pieces, roll them into a ball. Working with one dough ball at a time, keep the other dough balls covered with plastic wrap. On a lightly floured, clean work surface, roll out the dough into a roughly rectangular shape as thin as you can get it. Take one tablespoon of the filling and brush it over the dough, leaving a half-inch barrier all around. Sprinkle with 1/6 of the green onions.
- With the long side facing you, begin to roll the dough into a long thin log. Press the seams together on the sides and along the length of the log. Roll into a spiral shape, tucking the edge underneath. Place under the plastic wrap with the other dough balls and continue with the remaining dough.
- Preheat your air fryer to 350 degrees F. Take one of the spirals and gently flatten it with the palm of your hand on your clean work surface. Roll it out into a 7 to 8-inch circle.
- Spray the basket of the air fryer with olive oil spray. Place the pancake into the basket and spray the top with olive oil. Air fry for 5 minutes, flip, spray again and cook for an additional 5 minutes or until desired crispiness.
- Repeat with the remaining dough, cut into triangles if desired, and serve with the dipping sauce of your choice.
