A few habits separate crispy, evenly cooked food from the disappointing kind. These are the ones I come back to again and again:

  1. Don’t overcrowd the basket. Air needs room to circulate. When in doubt, cook in batches — a single layer with a little space beats a crammed basket every time.
  2. Shake or flip halfway through. For basket models, give it a shake; for oven-style, flip with tongs. It’s the easiest way to get even browning.
  3. Watch your food, especially with a new machine. Some air fryers run much hotter than others. If yours cooks hot, start checking a minute or two early.
  4. Use a light hand with oil. A teaspoon or two, or a quick spray, is plenty. Too much oil pools at the bottom and causes smoking.
  5. Use a meat thermometer for proteins. Charts give you a great starting point, but internal temperature is the only way to know meat is safely done.
  6. Preheat when it matters. Most everyday cooking doesn’t need it, but a 3–5 minute preheat helps for steak and anything you want a good sear on.

Do I need to preheat my air fryer? For most recipes, no — the food cooks properly without it. I really only preheat (3–5 minutes) for steak or anything I want a nice sear on.

Do I need to use oil in an air fryer? Not always. Many foods crisp up beautifully on their own, but a light spray or teaspoon of oil helps with browning and keeps seasonings in place. Just don’t overdo it, or it can smoke.

Why is my air fryer smoking? Usually it’s excess oil or grease hitting the bottom of the drawer. For fatty foods like bacon, adding a slice of bread or a little water under the basket helps. Regular cleaning prevents most smoking, too.

Can I cook frozen food without thawing? Yes! Frozen foods cook directly from frozen and come out crisp. Check the frozen food chart for exact times.
