Wow, so delicious! I made mashed potatoes (sliced (skin on) cover with water and add salt, with high pressure in IP for 8 mins, drained, added butter and salt, pepper, garlic granules, mashed well, added chives and sour cream, mixed well, stuck in fridge over night).
For lunch the next day, I added canned salmon to the chilled mashed potatoes, mixed, scooped into balls, dipped in egg, then seasoned panko, sprayed with oil, air fried for 12 mins turning once (mine weren’t quite done at 10 mins), and OMG these are heaven. This was one of my favorite appetizers when I lived in spain, I was obsessed. I have half my mashed potatoes leftover, planning on making ham and cheese potato croquettes later this week. I do have one question. Once they were fully cooked, the tongs worked great to pick them out. However, in the middle of cooking, when I tried to flip with tongs, some of them squished/fell apart. When I tried to turn with spoon, I worried the metal would scrape the non-stick, but it did work better. I was wondering how you flip them without breaking them? What do you use?
