Why Make Cheesecake Strawberry Tacos In The Air Fryer

Anyone who knows me knows that I love my air fryer. I’ve been using it to make all sorts of things lately, like air fryer chicken drumsticks and air fryer cheese sticks. So when I saw a recipe for cheesecake strawberry tacos, on the grill, I knew I had to try it!

The result was amazing – delicious cheesecake tacos that are crispy on the outside and soft on the inside. And they only take about 15 minutes to make! If you’re looking for an easy and fun way to serve up cheesecake, then you need to try these tacos!

Ingredients Needed

Ingredients Needed For Air Fryer Cheesecake Strawberry Tacos on kitchen table.
  • Strawberry Cream Cheese and Cream Cheese: Ues room temperature cream cheese, you can either use full-fat or low-fat cream cheese.
  • Pure Vanilla Extract: Make sure that you use pure vanilla, it makes for an amazing dessert taco!
  • Lemon Juice: Adds some citric asset flavor, to the cream cheese mixture.
  • Heavy Whipping Cream: The base for the cheesecake tacos, makes your filling creamy.
  • Fresh Strawberries and Freeze-Dried Strawberries: These make for a great topping, You can find the freeze-dried strawberries in the produce department.
  • Cinnamon Sugar: This is the delicious coating for your tacos!
  • Flour Tortillas: You can also use gluten-free tortillas or low-carb tortillas.
  • Egg: Use a large, room temperature egg.
  • Graham Cracker Crumbs: You can either make your own graham cracker crumbs or purchase them as crumbs.

How To Make Air Fryer Cheesecake Strawberry Tacos

Blend cream cheese, strawberry cream cheese, vanilla extract, lemon juice, freeze-dried strawberries, diced strawberries, heavy whipping cream, and cinnamon sugar in a food processor to make the cheesecake filling for Air Fryer Cheesecake Strawberry Tacos.

Step One: Start by making the cheesecake filling: In a food processor, blend the cream cheese, strawberry cream cheese, vanilla extract, lemon juice, freeze-dried strawberries, ½ Cup of the diced strawberries, heavy whipping cream, and 6 Tbsp of cinnamon sugar together – until fully blended.  Cover and set the cheesecake filling in the fridge while you make the “taco shells”. 

 Cut small circles from tortillas using a biscuit cutter, then prepare taco holders with foil for Air Fryer Cheesecake Strawberry Tacos, while setting up egg wash and graham cracker crumb mixture.

Step Two: Place one tortilla on a flat surface. Using a biscuit cutter (or even a small drinking glass) cut three circles in the tortilla, being careful not to overlap. Repeat with each tortilla, until you have 15 small circles.  Preheat the air fryer to 350 degrees.  Fold a piece of foil into 3-4 separate sections, pinching the ends to make a sort of “ taco holder”. Place the foil inside the air fryer basket. In a small bowl crack one egg. In a separate bowl, mix the graham cracker crumbs, and the remaining cinnamon sugar. 

Dip a tortilla circle into egg wash, then coat it with graham cracker crumb mixture for Air Fryer Cheesecake Strawberry Tacos.

Step Three: Dip a tortilla circle into the egg, letting any excess drip off in the egg bowl. And then dip it into the graham cracker crumb mixture, making sure it’s fully coated with the crumbs.

Step Four: Without touching the inside of the sides together,  fold the sides up like a taco shell.   Place the folded tortilla into one of the foil sections. Repeat until you have 4-6 taco shells sitting in the foil taco holder. Be careful not to overlap them. Place the foil into the air fryer basket, and cook for about 8-12 minutes. 

Remove golden, crispy taco shells from the air fryer and fill with strawberry cheesecake filling and diced strawberries for Air Fryer Cheesecake Strawberry Tacos.

Step Five: When the shells are golden brown and crispy, you can remove them from the heat and place them on a cookie rack to cool. Repeat until you’ve cooked all of the tortillas! Allow the shells to cool completely.  Fill a pastry bag with the strawberry cheesecake filling. Pipe each taco shell with 1-2 Tbsp of the cheesecake filling. Then, top each taco with the remaining diced strawberries.

How Long Will These Cheesecake Tacos Last? These cheesecake tacos are best served right away! If you don’t want to eat them all at once, then store the shells separately and they’ll last for 1-2 days on your countertop. The best tacos are best when they are served, right after air frying (cooking), so I recommend making only what you plan to eat that day.

Do I Have To Use Cheesecake Filling? No, you can use a lot of different fillings, some of my favorites are cheesecake pudding, vanilla pudding, or even fresh fruit. Fill your dessert tacos with anything that you love!

What Other Topping Can Be Used? While there is nothing better than garnishing these dessert tacos with fresh fruit, you can really use anything that you love. Some great options are crushed cookies, peach pie filling, hot fudge, rainbow sprinkles, or even caramel sauce!

Best eaten right away but, good kept in the fridge for up to five days. 
You can also freeze these! They’re good in the freezer for up to three weeks. They’re almost like a mini ice cream taco if so.
