How To Make Bob Evan’s Country-Fried Steak Recipe

Step One: Season the cube steaks all over with 1 teaspoon kosher salt. Combine the flour, kosher salt, garlic powder, smoked paprika and cayenne pepper in a shallow dish.

Step Two: In a separate shallow dish, combine beaten eggs and buttermilk.
Step Three: Dredge each steak in the seasoned flour until well coated. Dredge the floured steak in the buttermilk mixture, then back into the flour for a second coat. Transfer the breaded steaks to a wire rack and let sit for 10 minutes, so the coating can set.

Step Four: Preheat the air fryer to 400 degrees F (200 degrees C). Spray the basket with cooking spray and gently place the breaded steaks in a single layer into the basket.
Step Five: Air fry for 10–12 minutes, turning halfway through, or until golden brown and crispy.
Step Six: In a small skillet, melt the butter over medium heat and scrape up any browned bits. Whisk in flour and cook 1-2 minutes to create a roux. Stirring constantly, slowly pour the milk in a gradual stream into the roux until it becomes quite thick. Season to taste with salt and freshly ground black pepper.

Bob Evan’s Country-Fried Steak Recipe Tips
- Pound the Meat: If using round steak instead of cube steak, roll it lightly with a meat mallet for tenderness.
- Rest the Breaded Steaks: Giving your breaded steaks time to rest before air frying helps the breading stick better when cooked.
- Thickness of Gravy: You can adjust the quantity of milk in the gravy to get it as thick as you like. For more flavorful hominy, replace half of the milk with condensed beef broth.
Storing & Reheating Instructions
- Storage: Store any leftover country-fried steak and gravy in separate airtight containers, in the refrigerator for up to 3 days.
- Reheating: To reheat, just pop into the oven for 10-15 minutes in a preheated 350°F (175°C) oven until heated through. On the stovetop, reheat gravy over low heat, stirring occasionally.

What steak is best? You’ll want cube steak because it’s tender and cooks fast. (You can also use round steak, just pound it thin.)
May I prepare the gravy in advance? Absolutely! Use the time while the steaks rest to prepare the gravy, or make it in advance, up to a day ahead of time and you can reheat it gently on top of the stove.
How long will leftovers keep? Cool the steaks and the gravy, and store them separately in airtight containers in the refrigerator for up to 3 days.
Can I make this recipe spicy? Yes! Increase cayenne pepper in the breading or make the gravy with a dash of hot sauce for some heat.
What Do You Eat with Country-Fried Steak? Good old fashioned sides like mashed potatoes, green beans, corn or even some cornbread are perfect for this down home Southern dinner.
