Step 1: Marinate the chicken
In a bowl or zip-top bag, whisk together the water, teriyaki sauce, lime juice, garlic, tequila (if using), liquid smoke, salt, and ginger. Add the chicken, seal, and refrigerate for at least 2 hours — overnight is even better. Don’t go much past 8 hours, though; too long in citrus can turn the texture mealy.

Step 2: Make the fiesta lime sauce
Whisk the mayo, sour cream, salsa, milk, Cajun spice, lime juice, parsley, dill, and hot sauce until smooth. Cover and chill until you’re ready to serve — it can be made up to a day ahead.

Step 3: Cook the chicken (pick your method)
- Oven: Bake at 400°F for 20–25 minutes, flipping once, to 165°F.
- Grill (most like the restaurant): Preheat to medium-high. Grill 5–7 minutes per side to an internal temp of 165°F. This gives you the truest char.
- Air fryer: Preheat to 370°F. Cook 10–12 minutes, flipping halfway, to 165°F.
- Skillet: Heat 1 Tbsp oil over medium. Cook 4–6 minutes per side to 165°F.
Step 4: Sauce, cheese, and melt
Brush each cooked breast with the fiesta lime sauce, then top with shredded Monterey Jack. Melt the cheese — return it to the air fryer at 300°F for 3–5 minutes, slide a lid on the skillet, or run it under the broiler for a minute.
Step 5: Plate it up
Lay down a bed of tortilla strips, set the chicken on top, drizzle with extra sauce, and finish with pico de gallo, cilantro, and a lime wedge. Serve with Mexican rice.
