- 2 pounds Chicken thighs, or breasts
- 3/4 cup Soy sauce
- 1/4 cup Brown sugar
- 3 tablespoons Mirin , or rice vinegar
- 3 cloves Garlic, minced
- 1 tablespoon Ginger, minced
- 1 teaspoon Cornstarch, optional, for thickening sauce: 1 teaspoon mixed with 1 tablespoon water
- 2 teaspoons Sesame seeds, for garnish, optional
- 2 stalks Green onions, chopped (for garnish), optional
Instructions
- In a small bowl, mix 3/4 cup Soy sauce, 1/4 cup Brown sugar, 3 tablespoons Mirin (or rice vinegar), 3 cloves Garlic and 1 tablespoon Ginger. Divide the sauce into 2 bowls. Set one bowl of the marinade aside, for making additional sauce.
- Place the 2 pounds Chicken thighs into one bowl of the marinade, cover and refrigerate for 30-60 minutes.
- Preheat your air fryer to 375°F (190°C). Lightly brush or spray chicken thighs or breasts with oil and place them in a single layer in the air fryer basket. Cook for 12–15 minutes, flipping halfway, until golden brown and fully cooked.
- For additional sauce. in a small bowl whisk together the water and 1 teaspoon Cornstarch, and whisk into the bowl of marinade that was set aside.
- Pour the sauce over the cooked chicken, and garnish with 2 teaspoons Sesame seeds and 2 stalks Green onions.
