Air Fryer Lumpia

Lumpia is a popular Filipino snack or appetizer, often described as spring rolls or egg rolls. They consist of thin wrappers filled with various ingredients, typically vegetables and sometimes meat or seafood. Lumpia can be enjoyed in several different forms and they are a beloved and versatile part of Filipino cuisine.

Whether you’re a fan of lumpia or experiencing them for the first time, you’re in for a savory treat! These golden wonders are a perfect blend of crunchy wrappers and a deliciously seasoned filling. They’re often paired with a sweet and savory vinegar-based sauce or a garlic-peanut sauce to complement the flavors of the rolls.

We’re making everything except for the wonton wrappers from scratch. Start by cooking the sausage and veggie filling, then you’ll assemble the rolls before you air fry the lumpia to perfection.

These may look tricky to make, but once you get started you’ll see just how easy it is!

  • Ground Pork Sausage: Adds a rich and hearty taste to these spring rolls.
  • Onions: You need both green onions and white onions. Green provide a fresh and mild flavor that complements the pork, plus adds color. When minced, white onions add a slightly sweeter onion taste.
  • Vegetables: I’m using minced carrots for more subtle sweetness and color, plus some water chestnuts — I love their crunch and mild nutty flavor.
  • Garlic: Minced fresh garlic infuses the filling with a delightful garlic flavor.
  • Soy Sauce: Lends a savory, umami-rich depth to the filling and enhances the overall savory profile.
  • Seasonings & Herbs: Kosher salt enhances the other ingredients’ flavors and balances the filling’s taste. Ground ginger adds a warm, slightly spicy, aromatic note. Fresh cilantro provides a burst of freshness and a hint of citrus-like flavor, enhancing the overall taste of the filling. You could also use fresh basil or mint.
  • Spring Roll Wrappers or Egg Roll Wrappers: These thin, square wrappers serve as the exterior of your air fryer lumpia. You can use egg roll wrappers if you can’t find spring roll wrappers.

Step 1: Prepare the filling

Place a large skillet over medium-high heat. Cook the sausage until browned and crumbled, then add the garlic and continue to cook for another minute.

Stir in the green and white onions, carrots, water chestnuts, soy sauce, salt, and ground ginger. Cook for 5-7 minutes or until tender. Remove from heat, stir in the fresh cilantro, and set aside to cool.

Step 2: Assemble

Lay out a wrapper on a lightly floured work surface with one corner pointing toward you. Add the filling to the middle of the wrapper, then fold in the corner closest to you. Fold up the other sides, roll up tightly, and seal shut. Repeat with the rest of the ingredients.

Step 3: Add to air fryer

Preheat your air fryer to 375 degrees F for about 5 minutes to ensure it’s hot and ready for cooking.

Place the lumpia in the basket in a single layer — you may need to cook them in batches depending on the size of your air fryer. Lightly spray or brush with nonstick cooking spray or olive oil.

Step 4: Air fry

Air fry the lumpia for 8-10 minutes, turning them halfway through the cooking time. When golden brown and crispy, remove from the air fryer to cool for a few minutes.

Serve with your favorite dipping sauces and enjoy!

Air Fryer Lumpia Variations

  • Vegetable: Create a vegan or vegetarian version by filling the wrappers with a mixture of sautéed vegetables. Cabbage, carrots, bean sprouts, and mushrooms seasoned with garlic and soy sauce would be delicious.
  • Chicken: Substitute ground chicken for pork and mix it with vegetables and seasonings for a leaner and lighter filling.
  • Seafood: Use shrimp, crab meat, or a combination of seafood, along with minced vegetables and seasonings.
  • Spicy: Add a spicy kick by incorporating chili peppers, Sriracha, or red pepper flakes into the filling mixture.
  • Fusion: Get creative with your fillings by combining different cuisines. You could make a Tex-Mex version with ground beef, black beans, cheese, and taco seasoning. Or try a Thai-inspired one with ground pork, Thai basil, and Thai curry paste.
  • Breakfast: Create a breakfast twist by filling the wrappers with scrambled eggs, sausage, diced potatoes, and cheese. Serve with salsa or ketchup for dipping.
  • Sweet: Fillings like Nutella, sliced bananas, or cinnamon-sugar apples would make this lumpia air fryer recipe perfect for dessert. Dust the rolls with powdered sugar after air frying.
  • Cheesy: Add an extra layer of richness by incorporating cream or grated cheese into the filling.

Lumpia Air Fryer Pro Tips

  • Be mindful not to overstuff your air fryer lumpia. Overfilling can cause them to burst open during cooking. Aim for a balanced filling-to-wrapper ratio.
  • Seal Edges Securely: Make sure you seal the edges of the wrappers tightly to prevent the filling from spilling out when you air fry the lumpia. You can use a bit of water or a flour-water paste to help seal them effectively.
  • Line the air fryer basket with parchment paper or perforated paper designed for air frying. This prevents sticking and makes cleanup easier.
  • Lightly Coat with Oil: To achieve that beautiful golden color and crispy texture, lightly spray or brush the lumpia with cooking oil before air frying. Don’t skip this step!
  • For even cooking, flip the lumpia rolls halfway through the cooking time. This ensures that both sides become equally crispy.
  • Check for Doneness: Lumpia can go from golden brown to overcooked quickly. Adjust the cooking time if needed.
  • Serve Immediately: These are best enjoyed immediately after cooking while they are crispy. If you must cook multiple batches, serve the earlier batches and keep the rest warm in a low-temperature oven.
  • Experiment with sweet, savory, or spicy dipping sauces. I recommend serving with a side of sweet chili sauce for the best flavor!

Lumpia in the Air Fryer FAQs

Can you air fry lumpia from frozen?

Absolutely! Preheat the air fryer and cook the frozen lumpia at a slightly lower temperature for a longer time, typically around 350 degrees F for 15-20 minutes. Check them periodically for doneness.

Can I make these in advance and reheat in the air fryer?

Yes — in fact reheating lumpia in the air fryer will give them the best texture. Preheat the air fryer to 350 degrees F and reheat for 2-4 minutes or until hot and crispy.

Can I use a different wrapper instead?

Spring or egg roll wrappers work best for traditional recipes, but you can experiment with other wrappers, like rice paper. That said, cooking times and methods may vary.

How do I keep the lumpia from getting soggy?

Make sure you don’t overfill them, and remember to preheat your air fryer. You may also want to use parchment paper to line the basket, lightly coat the wrappers with oil, and avoid overcrowding the basket.

Can I make lumpia wrappers at home?

Yes, you can make the wrappers from scratch, but it can be a bit labor-intensive. Homemade wrappers are typically made from flour, water, and sometimes eggs. You would roll the dough into thin sheets and cut them into squares before using.

Storage

If you have leftovers, let the crispy spring rolls cool to room temperature and place in an airtight container. They store well in the refrigerator for up to 2-3 days.

Keep in mind that the lumpia will lose some crispiness when stored. But, you can reheat them in the air fryer at the same temperature for a few minutes to bring them back to life!

You can also freeze this recipe. Once the lumpia have cooled completely, flash freeze on a baking sheet before placing in a freezer-safe bag. They will keep for up to 2-3 months in the freezer, and you can air fry directly from frozen. Refer to the reheating from frozen instructions above!

Description

Air Fryer Lumpia are crispy, savory, and bursting with flavor. These Filipino spring rolls are made with ground pork sausage, fresh vegetables, and plenty of soy sauce and seasonings. Fried to perfection without any excess oil!

Ingredients

  • 1 pound Ground Pork Sausage
  • 1/4 cup Green Onions
  • 1/4 cup White Onions
  • 1/4 cup Carrots, Minced
  • 1/4 cup Water Chestnuts, Diced
  • 2 tablespoons Minced Garlic
  • 2 tablespoons Soy Sauce
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon Ground Ginger
  • 2 tablespoons Cilantro
  • 12 Spring Roll Wrappers, or Egg Roll Wrappers

Instructions

  • Prepare the Lumpia Filling: In a large skillet over medium-high heat, cook the ground pork sausage until browned and crumbled. Add minced garlic and continue to cook for another minute until fragrant. Stir in green onions, white onions, minced carrots, diced water chestnuts, soy sauce, salt, and ground ginger. Cook for about 5-7 minutes until the vegetables are tender and the filling is well combined. Remove from heat, stir in fresh cilantro, and let the filling cool.
  • Assemble the Lumpia: Lay out a spring or egg roll wrapper with one corner pointing toward you (forming a diamond shape). Place a spoonful of the prepared filling in the middle of the wrapper, then fold in the corner closest to you. Fold up the other sides, roll up tightly, and close with a dab of water or a flour-water paste to seal the edges of the wrapper. Repeat this process until all the filling is used.
  • Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes to ensure it’s hot and ready for cooking.
  • Lightly Coat with Oil: Lightly spray or brush the lumpia rolls with olive oil. This helps achieve a crispy, golden exterior during air frying.
  • Air Fry the Lumpia: Place the lumpia rolls in a single layer in the air fryer basket, making sure they aren’t touching. You may need to cook them in batches depending on the size of your air fryer. Cook for approximately 8-10 minutes, turning them halfway through the cooking time. The lumpia should be golden brown and crispy when done.
  • Serve: Remove the air-fried lumpia from the basket and let them cool for a moment. Serve them hot with your favorite dipping sauce, such as sweet and sour sauce, vinegar with garlic, or a soy sauce-based dip.
  • Enjoy: Dig into your crispy, savory Air Fryer Lumpia and savor the delicious flavors. These make for a fantastic appetizer or snack for any occasion.
