What Are French Palmiers?

Palmier are classic French Cookies made with pastry dough. They are also known as pig’s ear or Elephant Ears since they look like a pair of matching ears.

Although traditional French Palmiers are made with homemade dough, I used a premade puff pastry today, which worked perfectly.

  • Granulated Sugar
  • Cooking Spray
  • Butter
  • Sparkling Sugar

How To Make Air Fryer French Palmier

Roll the dough

Start by laying out the thawed puff pastry sheet and then sprinkle the top with sugar.

Roll one end into the middle and then roll the other end into the middle. Then press the top together, so the seam stays together. Place into the freezer for about 4 minutes.

Cut the semi-frozen dough into 1-inch pieces. Cut until you use all of the dough.

Spray your basket or tray with olive oil, and then place the sliced elephant ears on top. Important: Preheat the air fryer for 5 minutes at 350 degrees F, then air fry for about 7 to 9 minutes.

Brush with melted butter and sprinkle with sparkling sugar.

How long can you keep Palmiers?

These store well at room temperature. They will last for about 2 to 3 days. For any longer, place them into the refrigerator, but they will start to soften.

The key to a great palmier is to keep them crispy, so if you want to re-crisp them before serving again, place them into the air fryer, and spry with cooking spray, and then air fry at 300 degrees F for 1-2 minutes.

Can You Freeze Air Fryer French Palmier?

No, they wil not freeze well, so for best results make a fresh batch, when you want some! They are delicious freshly baked!
