How To Make The The Best Air Fryer Au Gratin Potatoes

Step 1: Grease your air fryer pan to prevent sticking. Wash, peel, and pat the potatoes dry, then slice them into 1/4 to 1/3-inch thick pieces and place in a large mixing bowl. Add the milk, heavy cream, Parmesan cheese, garlic, nutmeg, kosher salt, and black pepper, then toss everything together until the potatoes are fully coated in the creamy mixture.

Step 2: Transfer the coated potatoes into the prepared pan, spreading them evenly with a spoon. Place the pan in the air fryer or air fryer oven and set air fryer temperature to 330 degrees F and set cook time for 18-20 minutes until the potatoes begin to soften.

Step 3: Sprinkle the cheese evenly over the potatoes and air fry for an additional 3 minutes until melted and bubbly. Remove from the air fryer, plate, and serve hot.

Easy Air Fryer Au Gratin Potatoes Recipe Tips
- Pat potatoes dry before coating: Removes excess moisture for a creamy interior and crispy top.
- Slice evenly: 1/4–1/3 inch slices cook consistently and prevent some pieces from undercooking.
- Use room temperature dairy: Milk, cream, and cheese blend more smoothly into the sauce.
- Don’t overcrowd the pan: Ensures even cooking and a golden, crispy top layer.
- Add optional flavor boosters: Try cooked bacon, fresh herbs, or extra Gruyere for added richness.
Storing, Freezing and Reheating Instructions
- Storing: Keep leftovers in an airtight container in the refrigerator for 3–4 days.
- Freezing: Assemble but do not cook, then wrap tightly or place in a freezer-safe container. Freeze for up to 2 months.
- Reheating: Reheat in the air fryer at 320°F for 5–7 minutes until hot and crispy. Avoid microwaving to preserve the crunchy topping.

Air Fryer Potato Au Gratin Recipe Faqs
Can I use fresh potatoes instead of pre-sliced? Yes! Peel and thinly slice fresh potatoes, then soak in cold water for 10–15 minutes to remove excess starch. This helps them cook evenly and prevents a soggy casserole.
Can I make this recipe ahead of time? Absolutely! Assemble the casserole in advance and refrigerate until ready to cook. Air fry just before serving for a creamy, crispy result.
How do I get a crispy topping? Sprinkle crushed potato chips, panko breadcrumbs, or extra Gruyere cheese on top. Drizzle lightly with melted butter and cook until golden brown.
Can I use a different type of cheese? Yes! Gruyere, cheddar, fontina, or a cheese blend all work well. Mixing cheeses adds depth and richness to the flavor.
Can this recipe be reheated without losing crispiness? Yes! Reheat in the air fryer at 320°F for 5–7 minutes until hot and crispy. Avoid microwaving, which may make the topping soft.
Can I add other vegetables? Definitely! Thinly sliced zucchini, mushrooms, or spinach can be layered between potatoes for added texture and flavor.

Hi Laurie, I’ve copied/pasted a lot of your recipes and this one it the tops. It’s so similar to my “Canadian Potatoes Au Gratin” even though I’m in Australia and I’ve been making it for many years but baking in my oven. Now, I can make your AF recipe that looks “a breeze”. I’ll be making it this week for guests. You say to bake this at 330F which equates to 165C, but I only have 160 or 170C, so which do you think would be preferable and for what time? Thank you.
Laurie
Go with the lower temperature, you will need to add some time though.
Phyllis Groover
Would prefer to use Yukon Gold potatoes for this. Would 3 lbs of them approximate the same weight as 3 lg russet potatoes?
Thanks,
Phyllis

This was SO good! My new favorite recipe for scalloped potatoes. After I mixed them in the cream etc. I laid them in the pan in a nice circular shape before baking.
Sue Marie
I still haven’t made them, but want to tomorrow. I was wondering what size pan you used and how many layers of potatoes? I want to make sure they turn out.
Sue Marie
I’ve only been air frying for 2 wks now and see many of your recipes at the Instant Air Fryer Community that I want to try, this one especially. I would just like to confirm if your recipes have us assume you preheat and then add the food or not? Thanks in advance!
Laurie
No, I never preheat. The recipes are written for universal air frying.
Sue Marie
Thank you for the prompt reply.
