- 4 medium zucchinis

- 1/4 cup Parmesan cheese, grated
Instructions
- Wash the 4 medium zucchinis and pat dry.
- Carefully make thin, parallel slices along the length of the zucchini, about ⅔ of the way through, ensuring you don’t cut all the way through. The slices should be close enough to allow the zucchini to fan out but still hold together at the base.
- Brush each zucchini with 2 tablespoons olive oil, make sure some gets between the slices.
- Sprinkle with 1 teaspoon garlic powder, 1 teaspoon kosher salt, 1/2 teaspoon black pepper, and 1/2 teaspoon paprika. Try to get the seasoning in between the slices as well.
- Gently stuff grated 1/4 cup Parmesan cheese into the slices.
- Preheat your air fryer temperature to 375 degrees F (190°C), for 3-5 minutes.
- Place the seasoned zucchinis in the air fryer basket in a single layer.
