  • Dijon mustard (optional) – Optional, but I highly recommend it. It adds a tangy, savory layer to the glaze that complements the sweetness. 
  • Freshly ground black pepper – Used to season the glaze for the perfect flavor. Add extra spices as desired. 
  • Beef stock – Keeps the gammon moist while cooking. You can also use other types of stock or water. 

How to Make Air Fryer Gammon

Step One: Score the surface of the gammon in a diamond pattern to allow the glaze to penetrate the meat. Optional: For a milder flavor, soak the gammon joint in water for a few hours or overnight to reduce the saltiness. Drain before cooking.

Step Two: Place the gammon in the air fryer basket and add a small amount of water or stock to the bottom to create steam. Set cook time for 30-40 minutes in a preheated air fryer, at the air fryer temperature of 160 degrees C, or 320 degrees F, cook until the internal temperature reaches 70°C (160°F).

Step Three: In a small bowl, mix brown sugar or honey with Dijon mustard and black pepper. Brush the glaze over the gammon, increase the air fryer temperature to 200°C (400°F), and cook for an additional 10-15 minutes, or until the glaze is caramelized and bubbly. Remove the gammon from the air fryer and let it rest for 10 minutes. Slice and serve warm with your favorite sides.

Ingredients 

  • 3 pounds gammon joint, bone-in or boneless
  • 2 tablespoons brown sugar or honey, for glazing
  • 1 tablespoon Dijon mustard, optional
  • Freshly ground black pepper, to taste
  • Water or stock, for cooking

Instructions

  • Score the surface of the 3 pounds gammon joint in a diamond pattern. This allows the glaze to penetrate the meat.
  • If you prefer a milder flavor, soak the gammon in water for a few hours or overnight to reduce saltiness. Drain before cooking.
  • Preheat your air fryer to 160 degrees C (or 320 degrees F).
  • Place the gammon in the air fryer basket. Add a small amount of wWater or stock to the bottom of the basket to create steam. Cook for about 45-50 minutes, depending on the size, until the internal temperature reaches 70°C (160°F).
  • While the gammon is cooking, mix 2 tablespoons brown sugar or honey with 1 tablespoon Dijon mustard and Freshly ground black pepper in a small bowl.
  • After the initial cooking time, brush the glaze over the gammon. Increase the temperature to 200°C (400°F) and cook for an additional 10-15 minutes, or until the glaze is caramelized and bubbly.
  • Once cooked, remove the gammon from the air fryer and let it rest for 10 minutes before slicing.
  • Slice and serve warm, with your favorite sides.
