- 1 medium eggplant, cut into fry shapes

- Peel the 1 medium eggplant, and then cut it into strips, about 4 inches long and ½ inch thick
- In a large bowl, mix the 1/2 cup panko , 1/2 cup parmesan cheese, grated, 1/2 cup bread crumbs, 1 teaspoon garlic salt, and 1 teaspoon Italian seasoning
