Step Two: In another bowl, whisk together the oil, egg, vanilla extract, and buttermilk until smooth. Pour the wet ingredients into the dry ingredients and mix until fully combined.

Ingredients 

Muffin Ingredients:

  • 1 1/2  cup all-purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoon baking powder
  • 2 teaspoon salt
  • 1/3 cup vegetable oil
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2/3 cup buttermilk
  • 1 cup frozen wild blueberries

Streusel Topping:

  • 1/3 cup raw sugar
  • 1/3 cup all-purpose flour
  • 4 tablespoons butter (cold)

Instructions

  • In a large mixing bowl, mix the 1 1/2  cup all-purpose flour 3/4 cup granulated sugar 2 teaspoon baking powder, and 2 teaspoon salt, and mix well.
  • In another mixing bowl, mix the 1/3 cup vegetable oil 1 large egg, 2 teaspoons vanilla extract and 2/3 cup buttermilk.
  • Then mix the wet ingredients into the dry ingredients, mix well.
  • Fold in the 1 cup frozen wild blueberries, mix well.
  • Spray your muffin tin with cooking spray or line with muffin liners.
  • Spoon the batter into the muffin cavity, filling about 2/3 way full.
  • Spoon a couple of tablespoons of topping on each muffin.
  • Set the muffin tin into the air fryer basket, set the temperature to 320 degrees F for 12-15 minutes.
  • Let slightly cool before serving.

Topping Instructions:

  • In a small mixing bowl, mix the 1/3 cup raw sugar, 1/3 cup all-purpose flour and 4 tablespoons butter (cold). Mix until it’s crumbly.
