Air Fryer Copycat Panera Wild Blueberry Muffins – soft, fluffy muffins loaded with juicy wild blueberries and topped with a lightly sweet crumb. Quick, easy, and perfect for breakfast, snacks, or brunch at home.
Ingredients
Muffin Ingredients:
1 1/2 cupall-purpose flour
3/4cupgranulated sugar
2teaspoonbaking powder
2teaspoonsalt
1/3cupvegetable oil
1largeegg
2teaspoonsvanilla extract
2/3cupbuttermilk
1cupfrozen wild blueberries
Streusel Topping:
1/3cupraw sugar
1/3cupall-purpose flour
4tablespoonsbutter (cold)
Instructions
In a large mixing bowl, mix the 1 1/2 cup all-purpose flour3/4 cup granulated sugar2 teaspoon baking powder, and 2 teaspoon salt, and mix well.
In another mixing bowl, mix the 1/3 cup vegetable oil1 large egg, 2 teaspoons vanilla extract and 2/3 cup buttermilk.
Then mix the wet ingredients into the dry ingredients, mix well.
Fold in the1 cup frozen wild blueberries, mix well.
Spray your muffin tin with cooking spray or line with muffin liners.
Spoon the batter into the muffin cavity, filling about 2/3 way full.
Spoon a couple of tablespoons of topping on each muffin.
Set the muffin tin into the air fryer basket, set the temperature to 320 degrees F for 12-15 minutes.
Let slightly cool before serving.
Topping Instructions:
In a small mixing bowl, mix the 1/3 cup raw sugar, 1/3 cup all-purpose flour and 4 tablespoons butter (cold). Mix until it’s crumbly.
