  • Pineapple Slices: Use canned (drained) or freshly sliced pineapple.
  • Brown Sugar: The butter and the brown sugar create the caramelized coating on top!
  • Maraschino Cherries: Drain your cherries, so the juices do not run through the cake.

Start by spraying your air fryer safe pan with non-stick cooking spray. Then melt the butter in the microwave, pour it on the bottom, and then sprinkle the brown sugar on top of the butter. Prepare the cake mix, as directed on the box.

Place the pineapples down in the cake pan, and then place the cherries in the center of the pineapples. Pour the cake mix directly over the pineapples.

Place the cake into the air fryer basket, and cook for 20 to 25 minutes at 320 degrees F. Once the timer goes off, use a toothpick and stick it directly in the middle to see if it’s cooked or not. If it’s cooked, remove. If it does not, add another 5 minutes until it’s cooked in the middle.  Let it cool before you flip it.

Ingredient Notes:

  • Pineapple Slices: If you are going to use canned pineapple slices, make sure that you use the ones, not in the syrup.
  • Maraschino Cherries: You can find the min the grocery store in the aisle with the pickles. I usually place them on a paper towel, before adding them to the cake mix, this way cherry juice does not run in the cake mix.
  • Cake Mix: You can use any boxed cake mix, vanilla or white, that you want.

How to Store Pineapple Upside Down Cake

Let the cake cool to room temperature and then place the leftover cake into the refrigerator, the cake will last for 2 to 5 days. When you are ready to serve, let the cake come to room temperature.

  • 1 package cake mix, yellow or white

  • 2 tablespoons butter, melted
  • 20 ounces canned pineapple
  • 1/4 cup brown sugar
  • 3 maraschino cherries

Instructions

  • Start by spraying your air fryer safe pan with non-stick cooking spray. Then melt the butter in the microwave, pour it on the bottom, and then sprinkle the brown sugar on the bottom.
  • Then prepare the cake mix.
  • Use the instructions on the cake mix box, and prepare the cake mix, as directed. Each cake mix will be different, mine had eggs, water, and oil.
  • Mix well.
  • Then place the pineapples down (in my second cake, I had lots of batters) and added the cherries, for a more traditional upside-down pineapple cake.
  • Pour the cake mix (prepared) directly over it.
  • Place the cake (uncooked) into the air fryer basket, bake for 320 degrees F, for 25 minutes. Once the timer goes off, use a toothpick and stick it directly in the middle to see if it’s cooked or not. If it’s cook, remove. If it does not add another 5 minutes. Until it’s cooked in the middle.
  • Let cool, before you flip it.
