Assemble the Pop Tarts: Using a knife or pastry cutter, slice your pie crust in half across and divide each half into four rectangles, yielding eight total. Add two tablespoons of the pumpkin mix onto half of the cut pie crust, leaving ¼ inch of the outer crust untouched.  Place the remaining pie crusts over the tops of the pumpkin halves and use a fork to crimp and seal the edges. Poke several holes with the fork into the top layer to allow steam to release while cooking.

Pro Tips Pumpkin Pie Pop Tarts

  • Chill the Dough: Ensure the dough is well chilled before rolling it out. This makes it easier to work with and helps prevent the butter from melting too quickly in the oven, resulting in a flakier crust.
  • Use Parchment Paper: When rolling out the dough and assembling the pop tarts, work on a lightly floured surface and use parchment paper underneath. This prevents the dough from sticking and makes cleanup easier.
  • Even Thickness: Roll out the dough to an even thickness to ensure that the pop tarts bake evenly. Aim for about 1/8 inch thickness for the dough.
  • Leave Room for Sealing: When spooning the pumpkin filling onto the dough, leave a small border around the edges. This makes it easier to seal the pop tarts without the filling oozing out.
  • Ventilation Holes: Don’t forget to poke a few holes in the top of each pop tart before baking. This allows steam to escape during baking and prevents the pop tarts from becoming too puffy.
  • Egg Wash: For a shiny, golden finish, brush the tops of the pop tarts with an egg wash before baking. Simply whisk together one egg with a tablespoon of water or milk and brush it lightly over the tops of the pop tarts.
  • Cool Before Glazing: Allow the pop tarts to cool slightly before drizzling them with the glaze. This prevents the glaze from melting too quickly and ensures a neater presentation.
  • Customize the Glaze: Feel free to customize the glaze according to your taste preferences. You can add a splash of maple syrup or a dash of cinnamon for extra flavor.
  • Storage: Store any leftover pop tarts in an airtight container at room temperature for up to 2-3 days. They can also be frozen for longer storage. Reheat them in a toaster oven or microwave before serving.
